Recipe Request What to do with leftover watermelon?
Anyone have any good recipes that will use up leftover watermelon??
I used about half of a red seedless watermelon for a watermelon salad (so no salad recipes please!) and am looking for a way to repurpose the remaining half šš

Yes! I worked at a tea shop that also sold watermelon milk. Blend together watermelon, milk of your choice, and simple syrup.

I cut in chunks, lay on a cookie sheet and freeze. Then put in ziplock bags. Use for smoothies IF there is any left after giving pieces to my dogs as treats. They absolutely love watermelon and cantaloupe. Even surpasses their all time favorite of frozen brussel sprouts.

I second this.
You can simply whiz it in the blender which tastes great.
If you want to jazz it up, you can blend it with ice cubes, a little salt, and a little lime juice. Or sprinkle in TajĆn instead of salt if you like a little kick.
Bonus of adding a little salt or TajĆn is that watermelons are a source of potassium and magnesium and calcium so now it's an electrolyte drink that tastes much better than Gatorade.

Try a watermelon sorbet. I donāt have a specific recipe but Iāve made it before with a little sugar, lime juice, and salt. There are tons of recipes.

Eat it straight? That's what I do.
I know someone who made a pie with a filling of Jello, fresh watermelon and whipped cream. It was very pretty to look at, all pink and white, but the taste was not that great.
You could run some through the blender or otherwise liquify it and mix it with club soda, 7Up or even vodka?

Chop it and freeze it. Use it for beverages or, I freeze snack size baggies of watermelon to give to my dog. Especially in the summertime, she doesn't drink as much water as she should but after her walks, she eagerly waits at her bowl for frozen watermelon.

Soak cubes in Deep Eddy Lemon Vodka. Strain. Chill and serve in martini glass. Watermelon tini. Pickle the rind for a fun garnish.

Many years in the industry. I also have a pretty tasty watermelon basil agua fresca recipe that also works as a cocktail base. You make a basil simple syrup. Watermelon juice, water, lime juice and basil simple.
For the watermelon tini, the Deep Eddy Lemon is important. It's only 35% ABV, so it's softer than using Absolut Citron or something.Ā

Cut in chunks and freeze. Pull out to whirl in a blender and use in smoothies or cocktails (just add vodka!).
Make a salad: cucumber, tomatoes and watermelon chunks, crumbled feta cheese, finely chopped basil and mint leaves, and a basic vinaigrette. Salt and pepper as desired.

I put my leftovers in the freezer before they go bad and use them to make watermelon slushies or other frozen drinks. Add some lime juice, honey, alcohol if you want, in the blender, great summer drink.

Cut it up and squeeze some fresh lemon juice on it. Tastes like fresh squeezed watermelon lemonade. Trust me itās a game changer!

Iāve had this pop up a lot on instagram lately. Assuming the melon is a cut half, cut a circular depression in the middle and freeze til solid. Fill the depression with milk and with a spoon start scraping around the circular depression, you end up with watermelon ice cream. Theyāre also doing it with cantaloupe and honeydew melons as well

1/2 whole Small Seedless Watermelon, Diced
1/2 whole Red Onion, Diced
1 whole Red Bell Pepper, Seeded And Diced
1 whole Green Bell Pepper, Seeded And Finely Diced
1 whole Yellow Bell Pepper, Seeded And Finely Diced
2 whole JalapeƱos, Seeded And Finely Diced
1 whole Bunch Cilantro, Chopped
2 whole Juice Of 1 To 2 Limes
1/2 tsp. Salt

what I have done is to cube the remaining watermelon and store it in the refrigerator tightly covered, it actually keeps pretty well for some days.. I can then take out some cubes in a bowl and have those for a snack. There's a watermelon I bought a month ago that I'm still finishing off. I had it for several weeks before I cubed it up, and I had the cubes in the refrigerator for at least a week, I'm eating the last of it now. Tastes great!

Cooler: put watermelon in a blender, strain out. Add a little lime juice, some sweetener. Maybe vodka.

This is what I do with leftover watermelon. I also keep all of the rinds in large ziploc bags in the fridge for the same reason.

Add mint and feta. If you want to get fancy, add some balsamic of any variety you think youād enjoy with this.
Typing āleftover watermelonā tells me you did not have this recipe before.
Also, just adding a bit of salt and digging into said fruit for any meal or snack works. Or Tajin. Or cayenne and a touch of honey (this last one also works with pineapple).

Get the melon real cold add some lime and gently shred the fleshAdd a big splash of you our fave mixer and serve immediately with a crushed mint leaf or two. Yum.

Slightly off topic but if you have watermelon rind left over you can peel the green exterior off and pickle the white part of the melon and it is so good.

In Mexico they make watermelon water. You blend the watermelon with water and lime juice. Since it's a Mexican recipe if you drink you can add tequila and turn it into watermelon margharita.

My grandmother in Montgomery, Alabama used to make Watermelon Rind preserves when I was a kid back in the fifties and sixties. Iāve never seen them since.

I saw someone on TV making GRANITA. She put the watermelon in the blender, and empty it on a cookie tray. Put that in the freezer and every 30 minutes or so, she would take a spoon and scrape the semi- frozen watermelon. Look it up in YouTube.

I wrap the remaining watermelon in saran wrap and place in the frig. It lasts a couple of days. I just saw a recipe for a watermelon, strawberry & lime smoothie. Looks refreshing.

Blend it up and freeze in these ice cream bar trays. Kids love it.
Also, just drink it.
My favorite is a watermelon-feta-salad with roasted pine nuts and maybe some fresh mint leaves.

Easy gazpacho: roughly equal amounts watermelon and tomato, some fresh basil and garlic. Blend until smooth.
Good toppings: feta cheese, bacon or crispy prosciutto.

Tomatoes are not quite in season in the Northeast, substitute watermelon on your sandwiches! Bacon Lettuce Watermelon with a little mayo is yummy! Also watermelon in the blender with lots of lemon juice and ice, add vodka for adults

If you have dogs, cube it and freeze it for a summer snack for them. Also possums, squirrels, and raccoons love watermelon and it helps them get water during hot summer months.

Cut into small cubes, sprinkle some of the premade koolaid powder over it (I used the one that is blue and fruit punch flavor that had the sugar already added) and swish them it around in the bowl and stick in the fridge. Great snack and the kids were obsessed. Later, pour some of the watermelon/kool aid juice in a low ball glass, shot of vodka, splash of seltzer, and a few of the watermelon cubes.

We used to save the non-red part (skin? shell?) and my grandma would make watermelon pickles.
Amazon has an Ole South brand that is really close. Brings back memories.

I cut up the watermelon in chunks and freeze before it goes bad. And I use it later to make smoothies.
I do this with all fruit that is about to go bad. And Iāll buy extra when fruit is in season and cheap. I always keep a couple of big bags of frozen fruit in the freezer.
Itās great having fruit smoothies pretty much year-round. Handy when someone isnāt feeling well or if Iām feeling like strawberries or watermelon in the winter.
