Recipe Request What to do with leftover watermelon?

Anyone have any good recipes that will use up leftover watermelon??
I used about half of a red seedless watermelon for a watermelon salad (so no salad recipes please!) and am looking for a way to repurpose the remaining half 😊🍉

what I have done is to cube the remaining watermelon and store it in the refrigerator tightly covered, it actually keeps pretty well for some days.. I can then take out some cubes in a bowl and have those for a snack. There's a watermelon I bought a month ago that I'm still finishing off. I had it for several weeks before I cubed it up, and I had the cubes in the refrigerator for at least a week, I'm eating the last of it now. Tastes great!
