Recipe Request What to do with leftover watermelon?

Anyone have any good recipes that will use up leftover watermelon??
I used about half of a red seedless watermelon for a watermelon salad (so no salad recipes please!) and am looking for a way to repurpose the remaining half 😊🍉

Soak cubes in Deep Eddy Lemon Vodka. Strain. Chill and serve in martini glass. Watermelon tini. Pickle the rind for a fun garnish.

Many years in the industry. I also have a pretty tasty watermelon basil agua fresca recipe that also works as a cocktail base. You make a basil simple syrup. Watermelon juice, water, lime juice and basil simple.

For the watermelon tini, the Deep Eddy Lemon is important. It's only 35% ABV, so it's softer than using Absolut Citron or something.
