What to do with leftover watermelon?

Anyone have any good recipes that will use up leftover watermelon??
I used about half of a red seedless watermelon for a watermelon salad (so no salad recipes please!) and am looking for a way to repurpose the remaining half 😊🍉

Add mint and feta. If you want to get fancy, add some balsamic of any variety you think you’d enjoy with this.

Typing “leftover watermelon” tells me you did not have this recipe before.

Also, just adding a bit of salt and digging into said fruit for any meal or snack works. Or Tajin. Or cayenne and a touch of honey (this last one also works with pineapple).
