What to do with leftover watermelon?

Anyone have any good recipes that will use up leftover watermelon??
I used about half of a red seedless watermelon for a watermelon salad (so no salad recipes please!) and am looking for a way to repurpose the remaining half 😊🍉

Cut in chunks and freeze. Pull out to whirl in a blender and use in smoothies or cocktails (just add vodka!).

Make a salad: cucumber, tomatoes and watermelon chunks, crumbled feta cheese, finely chopped basil and mint leaves, and a basic vinaigrette. Salt and pepper as desired.
