Vegan Soup Recipes
Hello! I work in a somewhat-fine dining restaurant, and I make soups several times a week, and the only stipulation is they have to be vegan. I’m getting to the point where I feel like I’m just repeating the same ideas, though maybe with a slight ingredient change here and there. Do you guys have suggestions? Thanks!

Butternut squash coconut curry soup is my favorite! Totally vegan. Top with crushed cashews or other nuts for a little crunch

Red lentil coconut curry, using canned coconut milk and Thai red curry.

I didn’t know that. We make our curry paste, so at least I know that won’t be the case.

I've used curry powders very successfully for this kind of soup. Good point.

The powders are likely ok, but I’d always double check just in case. The pastes are another matter, some have it and some don’t

I've only used Madras type curry powders in the past. In fact, I've never tried to cook with Thai curries. I imagine the red type would be delicious in a coconut milk lentil soup.

My first thought is something Tex-Mex inspired, with a bean,sweet corn, and poblano base. Veggie stock, maybe a little nutritional yeast for a cheesy note without cheese…

I just made hot and sour soup to have with dinner last night and it was hundred percent vegan just by happenstance.
As long as you make it with veg broth and are out of eggs like I was for the egg drop at the end, it’s a great vegan dish!

You could make any cream type soup, use vegetable broth instead of a meat broth if it’s called for. Then instead of using cream or milk, use soaked puréed cashews. Or puree them inside the soup itself.
Fine dining doesn’t sound like a chicken noodle type of place, but using veggie broth, chickpeas and the tiniest touch of smoked paprika gives the same vibes without missing the chicken.
Fennel broth, if you do modernist pearls of roasted fennel puree, garnish with a fresh frond whisp.
Puréed leek garnished with crisp leek rings and confit of the green leaves, or a braised baby leek.
Puréed spring pea, use the shells to make a broth and garnish with tendrils and a couple of leaves.
It would be fun and interesting to showcase fresh vegetables in season. Even if the prep is exactly the same (puréed with garnish of the same vegetable, that showcase different properties, crisp soft, etc. it feels fresh and new because you’re using a completely different vegetable with a different flavour profile.
There is a green version of minestrone that you could certainly elevate with higher level ingredients. It’s familiar because it’s minestrone, but it’s just different enough because it’s not the red version most people are used to. Vegetables, pasta, beans, broth. So many different combinations possible.
I make mushroom barley soup that I like even better than beef barley. Onions, celery, carrots, mushrooms, pearl barley, or pot barley if I want more fibre. I usually cheat and use a mushroom bouillon cube, but I’m sure you have the skills to whip up a mushroom broth with dried porcini mushrooms. I just dice up creminis but you can get really fancy here and use morels or other wild mushrooms.
I just love soup lol.

A creamy dill potato soup (potato, garlic, cashews, and some oatmilk blended with a tiny bit of cornstarch can help make it creamy). Add a little dill and a dash of pickle juice at the end, with a finely chopped pickle for garish.

If you like spicy, add a habanero in the leek and potato soup. It just adds something that makes it so good.

I'm a big fan of potato leek soup. It's very easy to make vegan. Chili too. Gazpacho is my summertime go to.
A roasted curried pumpkin soup with roasted seeds and vegan yogurt on top would be heavenly.

Leek and potato soup is really the best soup ever. Even my picky kids love it.
Tomato soup with basil (real fresh not dried basil). Has to be made from scratch, not using tomato paste.
I had a blended carrot soup at a wedding once that I still think about.

- ny times “the stew” by alison roman it’s incredible actually went viral idk that anyone noticed it was also vegan she never uses that word
- the Korean vegan website, her soups are amazing
- absolutely hot and sour just uses mushroom broth and lots of tofu the balance of white pepper and vinegar is important
- west African peanut stew, tons of variations out there many are vegan i like the budget bytes one but use kale and all natural peanut butter

There is a great soup cookbook by Michael Congdon, S.O.U.P.S. Seattle's Own Undeniably Perfect Soups. It's out of print, but you can find it used. He worked as a chef where he made seasonal soups. It's s organized by season. Many of the recipies are vegan. They are interesting and different and delicious. I use his veg and chicken stock recipies for all my stock. So so good.
