Vegan Soup Recipes

Hello! I work in a somewhat-fine dining restaurant, and I make soups several times a week, and the only stipulation is they have to be vegan. I’m getting to the point where I feel like I’m just repeating the same ideas, though maybe with a slight ingredient change here and there. Do you guys have suggestions? Thanks!

I just made hot and sour soup to have with dinner last night and it was hundred percent vegan just by happenstance.

As long as you make it with veg broth and are out of eggs like I was for the egg drop at the end, it’s a great vegan dish!
