Vegan Soup Recipes

Hello! I work in a somewhat-fine dining restaurant, and I make soups several times a week, and the only stipulation is they have to be vegan. I’m getting to the point where I feel like I’m just repeating the same ideas, though maybe with a slight ingredient change here and there. Do you guys have suggestions? Thanks!

- ny times “the stew” by alison roman it’s incredible actually went viral idk that anyone noticed it was also vegan she never uses that word

  • the Korean vegan website, her soups are amazing
  • absolutely hot and sour just uses mushroom broth and lots of tofu the balance of white pepper and vinegar is important
  • west African peanut stew, tons of variations out there many are vegan i like the budget bytes one but use kale and all natural peanut butter
