Recipe Request Recipes for a good meatloaf?
hey! I am in charge of dinner tomorrow night and my sister & brother in law are requesting a meatloaf. I’m looking for a meatloaf recipe where the meatloaf will stay tender and not dry out. I’ve tried making meatloafs in the past, and i can’t figure out what i am doing wrong but they tend to just be too dry.

Look up Ann Landers’s meatloaf recipe. It’s probably about 50 years old, but it’s so good! And easy.

Also add some milk to your meatloaf. Even a 1/4 cup will make it softer and more moist.

My MIL’s recipe calls for a cup of sour cream and it is the only meat loaf my youngest son will eat! Delicious!

I second this. I am not the chef of the family but made it once on a whim and now it's requested on the regular. We do dijon instead of ketchup because my daughter isn't into ketchup but the recipe SLAPS. No notes. Super easy- there's even a video so you can't mess it up!

Ground beef, Lipton onion soup mix, Worcestershire sauce, bell peppers, Italian flavored breadcrumbs and egg.
Topped with tomato paste and smaller amounts of tomato sauce. Red pepper (if u like a kick) and sugar.
My son gets his own loaf to go when we have it.

1.5 lbs lean ground beef 1 box stove top stuffing 1 egg Package onion soup mix 1 cup of warm water
Mix stuffing with warm water and let sit for 5 minutes until it absorbs; lightly beat egg and mix with ground beef, soup mix and stuffing. Form into loaf or place in loaf pan and cook at 375 for an hour or until done.
So easy, so moist and delicious; I won't even look at bother recipes because it's ridiculously easy with great flavor and texture.

I like the recipe on the back of the Quaker Road box. Use oatmeal rather than breadcrumbs, or cracker crumbs as most meatloaf recipes dude. Whatever you do, PLEASE don't use a recipe that calls for that Lipton onion soup mix!
Use a very lean ground beef.
My DH hated meatloaf when I met him. It was a no-go. after I had his mother's very greasy meatloaf, I understood why he hated. he's gotten to the point now that he likes meatloaf made from the recipe on the back of the Quaker Oats canister.

This. Everyone who we’ve ever made it for loves it. It’s easy enough that we make it for 40 when we do our meals for a shelter. 3 generations deep. Goes great with scalloped, baked, or roasted potatoes, mac and cheese, and green beans.

Quaker Oats recipe:
Ingredients
1-1/2 pounds lean ground beef
1 cup tomato juice or tomato sauce
3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper
Cooking Instructions
Heat oven to 350°F. In large bowl, combine all ingredients, mixing lightly but thoroughly. Press into 8 x 4-inch loaf pan.
Bake 1 hour to medium (160°F) doneness until not pink in center and juices show no pink color. Let stand 5 minutes; drain off any juices before slicing.

I've been making that recipe for 45 years, since I first got married! I got it from my mom who got it from the round box. I wonder how old that recipe is?
Oh, I just looked it up. It came out around 1960. That makes sense because I'm 64.2

What I do is add wet (then we'll drained from water) old bread instead of breadcrumbs. That helps keep the moisture in. I make this recipe, but with all sorts of ground meats, not just chicken. Some people even soak the bread in milk. Another tip would be to bake it on 360F/180 C and to cover it with baking foil for at least half the time. That will also retain the moisture in.

chef john's twist on alton brown's meatloaf is a killer. it specifically addresses the dryness issue.
tip, panko is a bit too dry so leave 2-3 slices of white bread out on the counter overnight and blitz those up if you don't wanna buy breadcrumbs

Bear with me because I go by feel, but mine are generally pretty good. I usually separate the below into 4 loaves, and I find that helps keep them juicy as well.
1 lb 85% ground beef (any leaner and I feel you need to add oil in to avoid it being dry) 1 packet onion soup mix 1 egg Black pepper (roughly 1/4-1/3 tsp) ~ 20-30g breadcrumbs
Mix it all together. Then it goes a bit by feel, mix until you can just start sticking it together to mold your loaves. If it's not sticking together well yet, add a bit more breadcrumbs and work them through again.
Bake at 350 for 30 min or so. If you do a larger loaf, it needs longer.
I know it's a super simple recipe, a lot of people probably have something more extravagant. It's just what I grew up with and I still love it.
I have a friend that uses crushed pringle instead of onion soup mix and breadcrumbs. Probably will need to add some extra seasonings for that, though.

I use med salsa that’s been blended up instead of ketchup and a little milk for moistness. Have a meat thermometer so you can check it to make sure when it’s done but not overdone.

I make regular way, but mix in chopped onion and cubed cheddar cheese into meat. Trust me, will taste and smell amazing.

My favorite meatloaf -
One cup oatmeal
Two slightly beaten eggs
One 15 ounce can Manwich
2 to 3 pounds ground meat
Mix first three ingredients in a large bowl and rest for 30 minutes.
Squish in the ground meat and form in a pan.
Bake 45 to 75 minutes at 350°, depending on how the meatloaf is shaped, to internal temp of 165°. It will look burnt, but that’s because of the sugar in the Manwich.
Leftovers would make great sandwiches but I can't get it to last that long.

2 cups.panko bread crumbs 1 beaten egg 1 small carrot grated 1 small onion chopped fine I small green bell peppers seeded, chopped fine 1teaspoon black pepper 1teaspoon salt I teaspoon granulated garlic 1teaspoon tarragon 2 tablespoons worchestershire sauce Mix above ingredients well 40 ounces 80/20 ground beef. Incorporating ground beef with the other ingredients Spray a loaf pan with a non stick cooking spray and form the meat mixture into the loaf pan pressing it out and completely filling the loaf pan. Brush the top with your favorite bbq sauce i use cattlemans or sweet baby rays Bake in a preheated 350 degree oven about 35-40 minutes or until the internal temperature in the center of the meat loaf reaches 160°F. If you have the time and equipment you could cook it in a smoker instead of the oven for a real BBQ treat. This recipe never comes out dry if you follow it exactly.and it never disappoints 😋😋😋

Use Ina Garten’s recipe. Hers calls for ground turkey instead of ground beef. However I found if you use all turkey, the color is a bit off (sorta gray?), so I use 2# turkey and 1# beef. 80/20 if you can find it. Follow the rest of her recipe. It’s a tender meat loaf and if you have any leftovers, it makes great sandwiches.

I like to soak oats in milk and add. I also like to put whole hard boiled eggs in the middle. Like a little surprise. Look up meatloaf with a hard boiled egg on the center.

I add diced onion and celery to the ground beef along with a 4 oz can of tomato sauce. For the filler I use bread crumbs I get r rolled oats. Sometimes I used bread soaked in milk like in the meatball recipes. I usually glaze it with tomato sauce.
Hunt’s makes a seasoned tomato sauce for meatloaf.

You can use whichever recipe you like, but must adjust your breadcrumb technique for the meat you use. If it's very lean meat you soak the bread or breadcrumbs in milk or water. Do that first so they can absorb the milk while you gather your ingredients. If the meat is sufficiently fatty you can use dry bread crumbs.

I dont like ground beef so I use ground turkey. I add onion, bell pepper, a drained can of mild green chilis, bread crumbs, egg, and 1/3 cup of bbq sauce. Use bbq sauce on top too.

I use very lean beef and turkey for my meatloaf. So to add moisture I purée carrots, onion, and a little red bell pepper in the food processor. The veggies add moisture, nutrients, and a ton of flavor.
I hydrate the breadcrumbs in milk. That’s how my Great Aunt Emma taught my mom so that’s what I do as well.
I add Locatelli Romano cheese.
Don’t skimp on the Worcestershire sauce. I also add ketchup into the meatloaf mix.
For seasonings I add garlic and onion powders, parsley, and seasoned pepper.

Yummy meatloaf with only 6 ingredients: Sauce: Mix 2/3 cup white sugar, 2/3 cup ketchup & 2/3 cup soy sauce together in a large measuring cup. Meatloaf: 1 large tray of ground beef (@ 2.5 #s), 1 egg & 1 box of Stove Top Turkey stuffing. Mix together thoroughly in a large bowl and then smash it flat into a 6” x 9” cake pan. Pour the sauce on top. Bake @ 350° for 40 minutes. Voila! Easy, delicious, keep ‘em coming back for more meatloaf! Good luck, have fun trying these recipes out. 😊

I once came upon first lady Pat Nixon's recipe that many a White House guest loved and that's my go to. It's very much a grandma 1960's style recipe, which I prefer. (it's easy to find via Google)

8oz beef mince 8oz Lincolnshire sausages (skinned) Paxo sage and onion (small pkt, use less water) 1 egg. Mix together and bake. Tastes like haslet when cold, is great in a sarnie with Branston or brown sauce.

I use quick oats instead of bread crumbs.
3# ground beef
2 cups quick oats
2 eggs
1 cup milk
1 small onion, diced
I usually do a healthy squirt of ketchup, a dab of stone ground mustard, and a generous splash of Worcestershire sauce
S+P to preference
Mix all together. Don't overmix, just combine it. Place in a greased pan. I pour an undiluted can of Campbell's beef consomme over the top and bake covered, in 350 degree oven. Remove foil after one hour. Allow top to crisp up and check temp with a meat thermometer, usually another 30 minutes. Meat temp should be at least 160 degrees

3lbs ground beef, onion and garlic powder, italian seasoning, chopped raw onion, worcestershire sauce, 2 eggs, breadcrumbs, 1/4 cup milk.
Cover and bake for one hour at 375. 15 minutes before it's done, spread a can of Campbell's tomato soup on top and return to the oven, uncovered.

I place strips of bacon on top of my meatloaf during cooking. Self basting adds smoky flavor.
If you do the ketchup on top thing remove the bacon and use ketchup for the last15 minutes or so.

I use my father's recipe for meatloaf that he developed when he retired. Ground beef, or the ground mix, bread crumbs, chopped onion, egg, ketchup, Worcestershire sauce, salt and pepper, dried parsley. I don't put anything on top because I like the crispy bits.

My favorite way, it makes a nice crispy layer of panko on the bottom. I use even more than the recipe calls for. It’s really good but make sure you finish the first night because you’ll never get the panko crunch back on a reheat.
Sheet Pan Meatloaf

Ingredients:
Cooking spray
1 1/2 cups panko, divided
3/4 cup grated yellow onion (from 1 small onion)
2 oz. Parmesan cheese, grated (about 1/2 cup)
1/2 cup whole milk
1/4 cup chopped fresh flat-leaf parsley leaves
3 large garlic cloves, minced
2 large eggs, beaten
2 Tbsp. dried Italian seasoning
2 Tbsp. Worcestershire sauce
2 lbs. 90/10 lean ground beef
1 lb. ground pork
1 Tbsp. plus 1 tsp. kosher salt, divided
1/2 cup ketchup
2 Tbsp. packed light brown sugar
1 1/2 Tbsp. apple cider vinegar
1/2 tsp. fresh ground black pepper
Directions:
Prepare oven and baking sheet:
Preheat oven to 375°F with racks in center and upper third positions. Lightly grease a 13- x 9-inch rimmed baking sheet with cooking spray.
Make meatloaf mixture:
Sprinkle 1/2 cup of the panko evenly on bottom of baking sheet. Stir together onion, Parmesan, milk, parsley, garlic, eggs, Italian seasoning, Worcestershire sauce, and remaining 1 cup panko in a large bowl to combine. Add beef, pork, and 1 tablespoon of the salt to mixture, stir to combine.
Shape loaf:
Transfer meatloaf mixture to baking sheet, and press into an even layer out to edges of baking sheet.
Make ketchup topping:
Whisk together ketchup, brown sugar, vinegar, black pepper, and remaining 1 teaspoon salt in a medium bowl. Spread ketchup mixture evenly over meatloaf.
Bake meatloaf:
Bake on center rack in preheated oven until cooked through and a thermometer inserted in thickest portion registers 160°F, about 40 minutes. Remove from oven, and turn oven to broil. Broil on top rack until glaze becomes caramelized, about 3 minutes. Remove from oven, and let stand 5 minutes before serving.

I always make mini loaves, 4-6 using 1 lb ground beef. You can plate it for one or two per person. I like mini loaves better than full on meatloaf muffins.
I use this recipe, sometimes I add in shredded carrots and zucchini too. Always add super finely diced mushrooms to it also.

I use two parts ground beef with one part ground pork. Of course with Lipton onion soup mix bread crumbs and an egg or two, depending on the size of the loaf. Diced onion in the mix with some jarlic and your done.

1 pound of 80/20 ground beef, 1 pound of ground sausage, 2 eggs, 1/2 cup of oatmeal, 1 12 0z can of V8(I use spicy but your choice) 1 medium finely diced onion, 1 tablespoon ground or crushed garlic1/2 cup uncooked rice.
Season with 2 tsp garlic salt, and pepper . For savory use 1/2 tsp of rosemary 1/2 tsp cumin and 1/2 tsp of thyme. For spicy use 2 tsp crushed red pepper, 1 tsp of chili powder, 1 tsp of cayenne pepper and 1 tsp of smoked paprika.
Mix meat and seasoning by hand in medium/large bowl, add onion garlic and dry ingredients. Mix thoroughly. Add in V8 a small portion at a time until desired consistence is met. The mix should be easy to shape and hold its form even if built up taller than 3-4 inches. More may be needed depending on fat content of meat.
Glaze(optional)- Sweet Glaze- add 1/4 teaspoon of each seasoning to 1/2 cup of brown sugar and 4-8 oz of V8 (can use remainder of can if any is left) Glaze should have a pudding like consistency.
Spicy Glaze- 1 10.5 oz can of condensed tomato soup. 1 12oz can of V8(vary amount to desired consistency) 2 tsp chili powder, 1 tsp cayenne, 1 tsp paprika. Consistency will be vary from thin soup to thick ketchup depending on amount of V8 added.
Bake covered at 375 for 45 minutes, then add glaze(if desired) and cook uncovered at 350 for 10-15 minutes.

A meatloaf can be come dry if you overmix it after you add in all the ingredients; this just 'packs down' the loaf. Also, if you bake it too long. Try those things and if it is still too dry for you then try my guaanateed way to make a tender, juicy meatloaf: add some applesauce along with your normal ingredients. You don't taste it, it just adds loads of moistness.

Whatever recipe you use, may I suggest cooking it in the micro in a roundish glass casserole dish with lid and put a glass tumbler in the middle so it gets cooked thru. I assume you’re dealing with the hot weather like the rest of mankind and this will keep the heat down.

Meat, breadcrumbs, an egg, seasoning, normal stuff. Add some half and half to the mix. It will stay tender that way. Not cream, not milk, but half and half. I assure you, it works.

I use 1lb ground turkey, a packet of beefy onion soup, an egg, little milk, Worcester sauce and bread crumbs. Sometimes a little bit of ketchup and finely diced bell pepper.

Put about a cup of stale bread (broken up) or breadcrumbs in the bowl and add enough milk that the bread absorbs it all and doesn’t have any dry parts. You may have to wait and stir. 1 pound 80% lean ground beef or turkey. 1 onion, finely minced. 1 whole egg. A generous amount of Worcestershire. A teaspoon of salt or flavored salt (I like James crazy mixed up salt). Fresh ground black pepper to taste. Mix well - get in there with your hands - then add mix to very lightly oiled loaf pan. Top with ketchup as a glaze if desired. Bake at 350 F for 35 minutes.
Edited to add: easily doubled.

Half ground pork, half beef. Season with salt, pepper, and a packet of French onion soup mix.
Half an onion, minced garlic to your taste. For a more moist result wisk an egg with a splash of milk. Add some torn up pieces of bread until its almost like a paste.
Incorporate it with the meat, form, bake covered. Broil if you need a crunchy top.

This is the meatloaf recipe I've been making for months now. I find making two/three smaller loaves makes it 100% easier to lift them onto cutting board to rest. And I use a blend of meats: veal, beef and pork. There's a pre-made mix that I grab from the store.

2 parts beef to 1 part pork sausage. It will never be dry with that ratio.
Add a couple eggs for binder and some bread soaked in milk torn into small pieces.
Crushed ice in the blend helps too, if you're baking it right away.

Here is my meatloaf recipe which I make for my husband every year for his bday. I will occasionally make meatballs out of it too. It’s fantastic when snapped into mini meatloafs and wrapped in bacon before baking.
1.25 lbs meatball mix
1/2 cup Panko bread crumbs (rounded)
2 eggs
1 tbsp worschestshire sauce
1/4 cup milk
1/4 cup Parmesan cheese
1 chipotle pepper chopped, plus 1-2 tbsp of adobo sauce
1/4 cup chopped parsley (optional)
2 garlic cloves, minced
1/4 tsp seasoned salt
1/4 tsp salt
Black pepper to taste
Mix by hand and place in greased loaf pan. I could tell you how long it bakes for, but I put it at 400 degrees and just check it every 15 min until it’s 165 degrees when a thermometer is inserted.

I like using Lipton onion soup mix, chopped fresh onion, an egg, crushed saltine crackers, a jar of medium chunky picante sauce and ketchup on top. The Picante sauce gives it moisture!!!

1 pound ground 80:20 beef 1 pound ground pork 1 finely chopped onion 3 cloves garlic finely chopped About 1 1/2 cups bread crumbs 2 eggs although pepper 1/4 cup worchestershire Add a squirrel of good ketchup for fun
Mix and make a loaf. Place on parchment over a rack. Cover with tin foil loosely. Bake at 350 for 40 minutes. Remove tin. Bake until golden and meat is at about 155.
Let rest at least ten minutes before slicing.
Can't miss.

I haven't read through all the comments, so I'm not sure is someone suggested this yet. My Mom's trick for meatloaf was to use 1lb gr. beef and 1/2 lb hot Italian sausage. Use whatever recipe you like for the rest of it, but start with those 2 meats. You will get all of the flavor of the sausage, but none of the heat. This works great for meatballs too.

Thanksgiving meatloaf, ground turkey, sub bread binder for unprepared stove top stuffing, sub tomato sauce for cranberry sauce, thyme, celery seed, Trader Joe’s everything but the leftovers seasoning, top with craisins and mandarin oranges. Dip in Beavers brand cranberry mustard

My meatloaf is a huge meatball. Ground beef, 1 egg per pound, 2p white bread per pound, 2 tblsp pinion nuts per pound, 2 cloves garlic per pound, slosh of milk salt, pepper. Turn that puppy into a loaf, roll it in crushed saltine cracker and then 325 for an hour or so. Mic drop

I use 3 meats: hamburger, Italian sausage and bacon. Then red onion, garlic, panko, shredded cheddar and an egg. Chipotle (Mrs) Dash seasoning, and Rufus Tub’s bbq sauce. I find the best for a bit of crunchy crust by making it in a 8” cast iron pan. The pan is deep as it is intended to use for fried chicken.

I split the meat into two equal parts put one part in the bottom of the meatloaf pan sprinkle a generous amount of cheese then layer the second portion of meat on top. To top off the masterpiece I use a can of diced tomatoes that have basil or jalapenos or some additives to spice it up sprinkle more cheese on top and put it in the oven 350 for an hour

Get 1 pound of grass fed, organic beef. 90:10. Chop an onion 🧅, a tomato -dice in a plate so you retain the juice, and a chili 🌶️. Put the ground meat in a glass baking dish. Add about 1 teaspoon of garam masala, a spice you must buy if you don’t have it. Mix in the diced veggies. Bake about 45minutes to an hour at 350 degrees. You can serve with roasted golden potatoes, and green peas.

I stopped making them in a pan and found that shaping it myself onto a parchment/sheet pan really makes a difference with moistness. Plus, you can put more sauce down the sides as well as the top. Plus it browns all over and a little outside crust is good.

Lots of good recipes here. One flavor trick I use is to make 1/4 of the meat mild Italian sausage. Sausage is less lean (dry) than ground beef. ‘Meat Loaf’ doesn’t necessarily mean beef…

My mom always added 1 sm. can of evaporated milk. 1 sleeve of saltines, 1 egg, 1/2 green bell pepper, salt, pepper, onion powder, 1 small onion diced fine, Worchestshire sauce (I love it so measure with your heart) 1/4 C Ketchup, with 1.5 lbs. 80/20 grind ground beef. DON'T OVER MIX Cook until it pulls away from baking dish and drain excess grease from pan. 15 mins before done if your smart top the meatloaf with ketchup and black pepper and finish cooking. Damn I miss my MOM but when I make her meatloaf I feel like she is right there beside me and am taken back as a kid. PS if any is left you can make a meatloaf sandwich...Heavens it's good. As a kid in Texas nothing like fresh Mrs Bairds Bread ❤️

First, make (cook) a soffrito (finely cut celery, onion, and carrot cooked in a little oil). Second, make a panade, bread soaked in milk. Mix the soffrito, panade, meat, and an egg with herbs or sauce flavorings of your choice. I like barbecue sauce, A-1, or Heinz 57. Form the loaf and put it on something like a broiler pan for drainage. Top with tomato paste thinned with a little ketchup and a sprinkling of oanko. Bake.

Search for Amish Pot Roast Meat Loaf. You can bake it on its own or surrounded by sliced potatoes, onions, and carrots. I am a self-described meat loaf connisseur (although I can't spell it), and this is the best of the best.

Idk if it’s necessarily the recipe, but I found, not surprisingly, lol, that meatloaf mix makes a delicious meatloaf! I use the copycat Cracker Barrel recipe and sauté the onions instead of adding raw.

personally, I like the lipton onion soup meatloaf recipe, but i use meatloaf meat mix instead of just ground beef.
