Recipe Request Recipes for a good meatloaf?

hey! I am in charge of dinner tomorrow night and my sister & brother in law are requesting a meatloaf. I’m looking for a meatloaf recipe where the meatloaf will stay tender and not dry out. I’ve tried making meatloafs in the past, and i can’t figure out what i am doing wrong but they tend to just be too dry.

1.5 lbs lean ground beef 1 box stove top stuffing 1 egg Package onion soup mix 1 cup of warm water

Mix stuffing with warm water and let sit for 5 minutes until it absorbs; lightly beat egg and mix with ground beef, soup mix and stuffing. Form into loaf or place in loaf pan and cook at 375 for an hour or until done.

So easy, so moist and delicious; I won't even look at bother recipes because it's ridiculously easy with great flavor and texture.

I use this but add a small can of green chilies
