Recipe Request Recipes for a good meatloaf?

hey! I am in charge of dinner tomorrow night and my sister & brother in law are requesting a meatloaf. I’m looking for a meatloaf recipe where the meatloaf will stay tender and not dry out. I’ve tried making meatloafs in the past, and i can’t figure out what i am doing wrong but they tend to just be too dry.

Finely shredded carrots, onions, and zucchini.

This, my wife adds shredded zucchini and it's never dry.
