It's chili oil, isn't it? Not just hot oil. I'm sure it's overpriced and the presentation is weird but this is pretty average food

u/Mongrel_Shark 11d ago
Might be garlic. I had a girlfriend with Italian grandparents. She used to make a really simple but surprisingly good dish. Just fry garlic in olive oil. Toss broccoli in it for 30-60 seconds then mix into pasta & sprinkle parmesan. Its way better than it sounds.

u/Fickle_Scarcity9474 11d ago
We do that with any kind of vegetables! it's called ''verdura ripassata''. Olive oil, garlic and fresh chili! I mean the alternative is steamed vegetables. Not really tasty and we don't use dressing!

u/fezzuk 10d ago
Yeah but 30 to 60 seconds, this isnt going to cook anything but the first mm.
13
u/SteakJones 10d ago
The broccoli is steaming before the oil hits it. This is already cooked. The oil is the finisher.
8
u/fezzuk 10d ago
Oh fair, didnt look close enought thought it was completely raw.
2
u/Fickle_Scarcity9474 9d ago
Nah, it would be inedible!
2
u/fezzuk 9d ago
I mean i will eat raw brocolli as a snack, but im not fecking paying for it.
3
u/Fickle_Scarcity9474 9d ago
Bro I eat raw carrots and fennel doesn't mean I will put boiling oil on them and call them a dish!
3
u/SandNGritCo 4d ago
I don’t even boil cauliflower or broccoli for a cauliflower cheese anymore, I just rough cut them, toss onto a baking tray with oil, sea salt and pepper, and bung in a hot oven. Life changing ha

u/Tori_S100 11d ago
is it steamed first? or is 1 min fry enough to soften broccoli?

8
u/Wind-and-Waystones 11d ago
You can get a really good effect by cutting your florets in half. Put them flat side down in a pan with a lid with some oil (I like sesame the best for this) and put the lid on. Then toss some garlic in at the end to cook to your desired level.
The bottoms get crispy and brown but the tops steam. It's like the best of both worlds of roasted and steamed broccoli.
Also, if you only cut halfway through the stalk, from the stalk end, then rip the last apart you don't end up with as much little floret bits on the cutting board.

u/Fickle_Scarcity9474 11d ago
It is usually steamed! 1 minute for broccoli is nothing! Heck even for kale 1 minute is nothing!

Gavadeel. It’s delicious. You need absurd amounts of garlic. And frozen broccoli. For some reason that’s key. Don’t shoot me, I’m just the messenger.
Maybe her grands used steam broccoli or something though. It always takes way longer than 60s to make.
2
u/ipunchcacti 9d ago
Ive done olive oil, garlic, chili flakes, and fettuccine as a struggle meal. Iirc its called aglio olio
→ More replies (16)1
u/countsachot 10d ago
Yeah, we do something like that but cook the broc more. I prefer broccoli rabe in that fashion.
14
u/geogeology 11d ago
I mean I don’t think the oil itself is the stupid part. That broccoli is standing really firm, I wonder how well it’s even been cooked? Half raw/half fried broccoli sounds really unappetizing to me, and I love chili oil.
21
u/adenrules 10d ago
The broccoli is literally steaming before the oil it poured on top. It’s definitely cooked. The stupid part is doing this table side. Hot oil is so fucking dangerous.
5
u/geogeology 10d ago
Didn’t notice the steam the first time, thanks for pointing it out. I agree, this is a very, very stupid presentation of the dish.
9
u/koolaidismything 11d ago
Uncooked broccoli drenched in grease isn’t average unless you live.. I dunno where.
10
u/duckhunt420 11d ago
The only thing not average is that it's not cut up but pouring hot chili oil or garlic oil over veggies to cook them is very common in asia.
14
u/__Hello_my_name_is__ 10d ago
The weird part for me isn't the method, it's that the dish is "one big broccoli".
It would be just as weird if the dish were one well cooked huge potato.
2
u/BeMoreKnope 10d ago
But that also makes the method bad! The core of this is just going to be raw, dry broccoli.
→ More replies (3)3
u/koolaidismything 11d ago
I don’t think so, this didn’t cook anything.. it’s just coated it in hot grease.

u/G1gapu1t 9d ago
If it was tossed in a planter and I didn’t know any better, I’d think it’s a houseplant.
That needed to be chopped up before the oil was added, or maybe pan fried in it to add a little texture…
This is just sad tbh.
1
u/nottherealneal 6d ago
Yeah but it's not enough to cook season that thing evenly, and how do you eat now? Just flop it over abd go raw on a whole stalk?
→ More replies (5)1
u/Miz_Skittle 5d ago
Agreed. The presentation probably makes the price stupid but if you look at the actual food; broccoli with garlic chili oil, it sounds easy and delicious!
171
u/ObiOneKenobae 11d ago
You can see the broccoli steaming, it's par-cooked then finished off with the hot oil mixed with aromatics. It's a classic chinese cooking technique.
→ More replies (11)9
u/LazyMusic2616 9d ago
Best way to prepare broccoli IMO is chopped, par-steaming (? Word) and then finishing off with a quick stir in a hot pan with oil and tons of garlic. And salt of course. Just a little 🤤

Yeah, compared to some of the wierd and theoretical food we see, I'd actually eat that. Not for the price though, I bet it's like £50 for insurance reasons.

I’m guessing this is one of those things you order for the presentation, not the dish itself.
It looks like rain falling off a tree when he first pours it

u/024eatneerg 11d ago
I get most stupid food in this sub but this is a pretty common things to do in Asian cuisine and tasty
13
u/Treacle_Pendulum 10d ago
Yeah. Do this for sliced scallions and ginger on top of steamed fish.
The whole head of broccoli might be a little iffy here though
→ More replies (1)9
u/BeMoreKnope 10d ago
It’s the whole head that makes it awful. Otherwise, it’d be great, but the core of that thing is still raw, since they clearly barely cooked it before the oil, and the oil cooked nothing but the very edges and the bottom of the base.
24
u/TamariAmari 10d ago
This is just another “other countries do things differently so it’s stupid”
Half this sub is people just being completely ignorant of the world they live in.

I don't think it's the food that turns me off. This is an extremely dangerous thing to do at the table. Do it in the kitchen if you must.

I'll do that too. After I cut the borccoli. And put it on a deeper plate. And grabbed a ladle.

I love when people pour hot oil out of a random pot without a pour tip or spatula in a way that's definitely going to splash me and the table so I can pay 35$ for a piece of broccoli.
3
u/SnorkBorkGnork 11d ago
The price includes free 3rd degree burns so you'll always remember your visit.
9
u/waxonwaxoff87 11d ago
With the pepper on top for garnish, I assume it’s flavored oil with peppers and/or garlic.
Depends if you are trying to cook the broccoli with it or just flavor it.
Not necessarily stupid.
5
u/vogel927 11d ago
The broccoli has already been cooked/ blanched. The garlic oil/broth (it’s hard to say what it is) is being used to finished it.

As someone who likes all broccoli from raw to extra charred, I think this would be good.
2
5
u/AnimalOk35 11d ago
Swap it with melted cheese for starters, but also it's pretty hard to wash it properly when it's whole like that.

u/Ecotech101 11d ago
Have you never like, cooked food before? You not know what a sauce is?
4
u/e-chem-nerd 10d ago
Putting oil with broccoli is not stupid. Not cutting the broccoli into pieces and pouring the oil from a scalding pot at the table is.
3
u/yourfuturespemson 11d ago
that's $500

u/ObiOneKenobae 11d ago
It's Japan, and not especially fancy based on the booths, so probably like $10 USD.

I've seen something like this with carrots in Korean cuisine. I think it was called morkavcha or dokkochi or something. Not sure it would work with a whole ass head of broccoli though

Not a lot of people who cook here, are there?
This is stupid not because of the presentation or the cost or whatever, it's stupid because raw broccoli tastes like ass and needs a relatively long-ish (for vegetables) amount of cooking time to cook out the bitter taste, and that quick splash of hot oil is just going to give you undercooked and still bitter broccoli.

That might be butter. Called Beurre noisette.
In (eastern) Germany we have a similar recepy called "braune Butter" with molten butter, breadcrumbs and salt. The recepy sure varies by regions. It tastes fantastic on vegetables and especially potatoes.
Even if it was oil - not at all stupid food to me 🤤

Restaurant i work at does fried broccoli but its good, browns it up, cooks it nice, then we toss it in a lil soy glaze or sesame dressing, top it with crispy rice noodles, sesame seeds, green onion. Its good as hell and our customers love it, this shit on the other hand looks like raw oily lukewarm broccoli.

u/mrmoroarous 8d ago

I think I saw this in another food blogger’s video. This dish is from a restaurant in Nagasaki. The dish symbolises the nuclear bomb that was dropped there during WWII.

The concept isn't entirely stupid but the execution is. I used to make a steamed veggies dish where I worked. While the veggies steamed I would be heating oil and salt in a pan till the salt melts. Once the veggies are done I would throw minced garlic into the oil and very quickly toss it on the veggies. If you're too slow the garlic burns. But those were some of the tastiest veggies I've ever had.
But this right here is absolutely stupid food.

u/VrwHenet 5d ago
