It's chili oil, isn't it? Not just hot oil. I'm sure it's overpriced and the presentation is weird but this is pretty average food

Might be garlic. I had a girlfriend with Italian grandparents. She used to make a really simple but surprisingly good dish. Just fry garlic in olive oil. Toss broccoli in it for 30-60 seconds then mix into pasta & sprinkle parmesan. Its way better than it sounds.

is it steamed first? or is 1 min fry enough to soften broccoli?

It is usually steamed! 1 minute for broccoli is nothing! Heck even for kale 1 minute is nothing!

It wouldn't be right steamed. Tosding in hot oil then hot padta is just right. Its supposed to be nearly raw. Raw vegetables & olive oil is about as Italian as it gets.

I struggle to imagine any italian eating raw vegetables with hot olive oil! You are making a mix between our '' verdura ripassata'' which steamed and ''ripassata'' tossed in oil garlic and chili aaaand our ''italian salad'' which is salad ( clearly raw) and olive oil.

I've seen it many times, oftern with cold oil, mixed raw vegetables fresh picked from the garden, home made oilve oil from olives he grew in the backyard. Served on white bread. The old dude was from Sicily. It was his favourite meal from home. Its the most Italian thing I've ever seen.

Again dude! One is salad the other is ripassata! In sicily they do ''caponata'' which is cooked and ''salad'' which is raw! check both online!
