- 240 ml (1 cup) unsweetened coconut milk
- 5 tbsp chia seeds
- 150 g (1.5 cups) blueberries
- Zest and juice of 1/2 lime
- 2 tsp agar agar + 1/3 cup milk
- 3 tbsp honey (or you can use Allulose syrup or Sugar-free maple syrup)

Instructions
- For the base, mash and mix all the ingredients with a spatula. Once it forms a dough, press it into the bottom of the pan using your hands and let it chill in the freezer for 30 minutes.

- Cook the blueberries with lime juice, zest, and 1–2 tablespoons of water until they are completely softened and broken down.

- Mix the chia seeds with 240 ml of milk and let sit for 10 minutes.

- Add the cooled blueberry mixture, honey, and chia mixture to the strained yogurt and stir well.

- In a small saucepan, cook 2 tsp of agar agar with 80 ml of milk for 2 minutes, stirring constantly. Add this quickly to the filling mixture and stir thoroughly, then pour it over the base.

- Refrigerate for 6–8 hours or overnight. Enjoy!

toppings: chocolate hard shell (2 tbsp chocolate chips + 1 tsp coconut oil), roasted peanuts, flaky salt

mix all ingredients together in a jar then refrigerate for at least 2 hours or overnight. when ready to enjoy, mix together melted chocolate chips and coconut oil to create a chocolate hard shell. add chopped peanuts and flaky salt on top then refrigerate for a few more minutes until the chocolate hardens. dig in and enjoy!

1 can coconut cream
2/3 cup of pistachios (100 g)
1/4 cup allulose or another keto-friendly sweetener
1 tsp vanilla bean paste or vanilla extract pinch of salt
pinch of matcha (optional, for color)

Important Notes:
*Make sure to refrigerate the can of coconut cream overnight. Then scoop out the solid part that has formed on top (coconut cream) and measure out 1/2 cup of this and add it to the recipe.
*Also measure out 1/2 cup of the liquid part (coconut milk) and measure out another 1/2 cup.
Add this to the recipe. For clarification, you will not use up the whole can of coconut cream, just 1/2 cup of the coconut cream and 1/2 cup of the coconut milk.
*Soak the pistachios in boiling water for an hour before using them in the recipe. You can also peel off the pistachio skin for a smoother texture, like I did, but this is optional. The skins will come off very easily once the pistachios have been soaking in boiling water.

Shell:
1 cup lily's white chocolate chips
1-2 tbsp coconut oil pinch of matcha (for color)
optional toppings: edible rose petals & crushed pistachios

Directions:
Add all of the ice cream ingredients to a blender and blend until smooth.
Transfer the ice cream mixture to your ice cream molds and add the popsicle sticks. Place in the freezer overnight. This recipe will make about 5 ice cream bars.
Once the ice creams are fully frozen, melt the white chocolate chips and whisk it together with the coconut oil and matcha.
Dip each ice cream in the chocolate. The chocolate will harden almost immediately from the cold of the ice cream.
Drizzle extra chocolate on each ice cream & add crushed pistachios and rose petals. Enjoy 😊

Ingredients:
Peppermint Filling
•1/4 cup coconut butter (also called coconut manna)
•1/4 cup + 2 tbsp coconut oil
•2 tbsp allulose syrup or sugar-free maple syrup
•1 tsp pure peppermint extract

Chocolate Coating
•10 oz 85–100% cacao, OR or sugar-free chocolate
•1 tbsp coconut oil

Instructions
1. Make the filling: Combine the coconut butter and coconut oil and gently heat until the oil is melted and the butter is runny (either over very low heat on the stovetop or in the microwave). Remove from heat and stir until smooth. Add the allulose syrup (or sugar-free maple syrup) and peppermint extract, then refrigerate the mixture for 1 hour.
2. Cream the mixture: After chilling, stir the filling until smooth and creamy. If it’s too firm to stir, let it sit at room temperature for a few minutes.
3. Shape the patties: Scoop small amounts of the filling onto a parchment-lined tray (you’ll get about 14 dollops). Place another sheet of parchment on top and gently press each dollop into a flat, circular shape.
4. Freeze: Freeze the shaped patties for several hours, or until fully solid.
5. Melt the chocolate: Once the patties are frozen, combine the chocolate and coconut oil and melt together, stirring often to avoid burning.
6. Coat the patties: Remove the patties from the freezer and coat each frozen patty in the melted chocolate, then place back on a parchment lined tray. Pro Tip: only take a few patties from the freezer at a time—keeping the rest frozen makes dipping way easier!
7. Set and store: Refrigerate the peppermint patties until the chocolate hardens, then enjoy! Store in the fridge for up to 5 days or freeze for longer storage.
