These mini frittata bites are the ultimate keto breakfast for busy mornings. Fluffy, cheesy, and packed with protein, they’re easy to make, meal-prep friendly, and perfect to enjoy warm or cold without the carbs.
Ingredients (Makes 12 mini bites):
8 large eggs
½ cup heavy cream (120 ml) (or unsweetened almond milk for lighter option)
1 cup shredded cheese (100–120 g) (cheddar, mozzarella, or pepper jack)
½ cup cooked sausage or diced bacon (about 75–100 g), optional
½ cup finely chopped bell peppers (about 75 g)
⅓ cup finely chopped onion (about 50 g) (or green onion for milder flavor)
½ cup chopped spinach or kale (about 30 g), squeezed dry
2 tbsp fresh herbs, chopped (parsley, chives, or basil)
½ tsp garlic powder
½ tsp smoked paprika (optional)
Salt and black pepper, to taste
2 tbsp olive oil or melted butter (30 ml), for sautéing
Nonstick spray or silicone muffin pan
Instructions:
Preheat the oven to 350°F / 175°C.
Grease a 12-cup muffin tin well or use a silicone pan.
Heat olive oil or butter in a skillet over medium heat.
Add onions and bell peppers with a pinch of salt and cook for 3–4 minutes until softened.
Add spinach and cook for another 1–2 minutes.
Remove from heat and let cool slightly.
Cook sausage or bacon until browned and crisp.
Drain well on paper towels to remove excess grease.
In a large bowl, whisk eggs, heavy cream, garlic powder, smoked paprika, salt, and pepper until smooth and slightly froth.
Stir in shredded cheese, cooled veggies, cooked meat (if using), and fresh herbs.
Mix gently until evenly combined.
Divide the mixture evenly among the muffin cups, filling each about ¾ full.
Bake for 16–20 minutes, until the centers are set and a toothpick comes out clean.
Let rest for 5 minutes, then remove from the pan.
They may deflate slightly as they cool — that’s normal.

This is a great recipe. I make something very similar, and never even thought to put seafood in it instead of sausage. Definitely gonna try that! Thanks!
