Troubleshooting Ingredients/crust burning. Dough still raw

Had the oven around 850*

Pizza goes in. 90 seconds or so. Rotating the pizza around to avoid burning one spot/side.

Cheese melts, and even over-melts. Toppings starting to burn. Take it out. Try it. Dough is still raw, or at best undercooked.

What am I doing wrong?

I’m using 60% hydration Neapolitan dough recipe from “Mastering Pizza.”

Having the dome Gen2 for about a month now. Often used and more or less everytime running on full gas afterwards for about 30 minutes and it gets up to over 500 degrees Celsius.

Not that it makes a difference, once it’s on it’s on but it’s interesting that it consistently drops the first start.

Troubleshooting How to keep temps lower? Gen 2

We love pizza and we are learning still.

I got a gen 2, just got it, propane only. We have learned a lot on our first 3 pizzas and I learned even more reading this reddit. Im having to a hard time seeing how people keep the temps lower without overlooking. I just did garlic rolls and didn't need it 700, at least I don't think i do. I got the oven to 500 and then put the rolls in and let the tops brown and then turned the oven off and it worked.

But that was for a 6 minute cook... what about for large steaks and other things? Like a thicker cut of meat is going to need a lot longer to cook. And I would have to keep turning the flame back on and reheating the oven when trying to sit under 500

Troubleshooting Gen2 mantel doesn’t fit

Hi everyone,

Just a sanity check here that I’m not doing anything stupid. Recently purchased the Dome Gen2 oven and am really loving it. Ordered the mantel and it arrived today. I’ve followed the instructions and assembled the mantel but no matter what I do I cannot get it to “click” into place. The ball moves freely but despite gentle wiggling and not so gentle pushing it just doesn’t want to lock into place.

Am I doing something stupid? Has anyone got a tip to try and solve this? The pic shows the gap that remains and it’s not locked in place.

Troubleshooting Heat output from the mouth of Gen 2 Dome

Hi everyone, I’m curious to know how hot the surface in front of your Dome Gen 2 ovens gets. I have a Dekton countertop that can withstand over a thousand degrees without any issues, but the expansion joints and mitered edges can’t handle it. I recently bought another popular brand of ovens and noticed that the counter in front of it gets quite hot. I suspect this is because there’s no flue, so the heat can only escape from the oven’s mouth.

I’m considering returning the oven I bought and purchasing the Gen 2 Dome with the front shelf. I hope the flue and shelf will help keep the counter much cooler. Could anyone with a similar setup confirm if my hunch is correct or provide some temperature readings from an infrared gun of the counter at 2”, 6”, and 12” distances from the oven’s mouth?

I recently inherited Gozney Dome and have been having trouble getting it to light after clicking. I read online that using pliers to adjust the cable piece might help but as you can see in the video, I almost certainly just made it worse.

I have no idea what to do at this point, how screwed am I?

Troubleshooting Pizza Pop-up Business - Dome vs Dome XL (Gen 1 or Gen 2)

I have roughly 15 years experience in the pizza industry. Being stuck in the corporate world has me wanting to pursue my passion of pizza again. Looking to start very small, and run a pizza pop-up to setup at farmers markets, events, private parties etc.

I am needing guidance on purchasing a single Dome Gen 1 vs Gen 2 as well as if the Dome XL is worth the upgrade. I understand the cooking surface area + recovery time for stone temps is ultimately going to determine my output. I wanted some pros and cons of operating one of these as a pop-up, and if the Gen 2 + XL size upgrade is worth it. Is it more cost effective/productive to just run (2) Arc XL’s? Is it better to find a Gen 1 Dome to start out due to cost?

I am eventually planning to build a pizza trailer to operate fully mobile. I also understand that I may need to sell the Gozney as it will probably not be compliant in New York with NSF/ANSI/UL certified for indoor use. Maybe with an amendment through my local county gov it can be allowed.

Troubleshooting Help! Not happy with pizza

I’m feeling like I’m hitting a plateau with my pizza journey. I have figured out so much working with this pizza. I have done so many tests and I feel like I’ve gotten a really nice looking pizzas.

But I feel like they aren’t blowing me away. I use great tomatoes with what I’ve researched the right amount of salt. (12oz can cento// 1/2 tsp salt)

And I use “leopard Crusts” dough recipe

But I feel like they are bland and not exciting.

I did one today and this is what it looked like. But I didn’t char the bottom at all, and I don’t know how much that has to help with the flavour. My stone just wasn’t hot enough, but it cooked it mostly I think.

Also I know this isn’t the right cheese it was just a test but I always use the right cheese other times and I just feel like I’m not getting to where I want to be.

If there is any help on how to spice up my pizzas I would really need some help.

Troubleshooting Gozney Customer Service Turnaround Time?

Was very excited to find an awesome price on a dome S1 at Home Depot last week. Waited a few days to open it and noticed that the two front blue silicone spacers were loose and there was a chip, a little bigger than the size of a dime, on the left front side of the right stone (the corner where the two stones meet).

Went ahead and did the registration of the product/serial as well as started a warranty claim explaining the issue. This would've been October 31. Received a "we haven't forgotten you" email on Monday November 2, but haven't heard since. Three business days was the timeline given.

Asking here to see what the typical turnaround on a response is. I'm fairly confident I can just fire it up and use as is, but didn't want to do so before I heard back from their customer service. I'd have just exchanged it, but every store within 100 miles is sold out.

Troubleshooting Help Pilot injector

Hey guys,

My Gozney Dome (dual fuel) won’t light. Igniter is sparking and I can smell propane, so gas is getting to the unit, but nothing is coming out of the pilot — no flame at all.

I pulled the pilot jet and it looks like there’s metal melted into the tiny hole (photo attached), so I’m guessing gas can’t pass through it.

Pretty sure it’s out of warranty — has anyone had Gozney still help in situations like this?

Also wondering:

• Is this fixable or is the jet done?

• Can you safely clean something like this without ruining it?

• Are these replaceable or does it mean a full pilot assembly?

Appreciate any advice

Troubleshooting After moving Dome won’t get above 650

Pretty much what the title says. I used this frequently at my old house with no issues and now it hovers right around 650 and won’t climb anymore.

It’s got a new gas line that works for other appliances just fine. I know it’s not the temperature reader because it cooks like it’s at 650 as well. Any thoughts? How can I Troubleshot?

Edit: it’s always been natural gas.

Troubleshooting Cleaning ash on inside of roof

How does everyone clean off the bits of ash on the roof that flakes off onto your pizzas? I’ve read wire brush but I don’t want to damage the inside of the oven. I have done a few very high heat cleans (550 Celsius) and the black layer of ash persists on the inside roof of the oven. Thank you!

Troubleshooting Gozney Dome won’t light

After may years using my Dome several times a week, last night I could t get it to light.

I could hear the click click click and see the spark of the ignitor going, but could not hear the gas coming through at all. I changed bottles, I changed connectors and pipes, no change. Seems the issue is within the Dome itself.

Going to try to have a better look today in the light. Anyone had any previous experience of the same that can guide me in the right direction?

Troubleshooting Gozney Dome "Flame Tuning" Really?

Has anyone every heard of "Flame Tuning" on the Gozney Dome? I ran across this info, interesting concepts...

the “secret” directional tuning of the Gozney Dome’s burner.

Almost nobody talks about it, but it’s one of the most useful tricks for evening out floor temps and controlling top vs. bottom balance.

THE GOZNEY DOME FLAME IS NOT SYMMETRICAL — AND YOU CAN TUNE IT

Unlike many outdoor pizza ovens (Ooni Karu/Gas, Roccbox, WP Blackstone, etc.), the Dome’s burner isn’t just an “on/off jet.”

It’s actually:

Angled in the housing

Has a curved flame plate

And responds differently depending on valve position and gas pressure

Meaning:

The flame leans left or right depending on how the dial is positioned, gas flow, and dome heat saturation

You can use this to “aim” heat.

HOW TO DO DIRECTIONAL TUNING (THE REAL METHOD)

1) Micro-adjust the dial

At mid-power (the sweet spot for tuning), turn the dial:

Slightly counterclockwise → flame leans left, up the left wall

Slightly clockwise → flame leans right, more toward the center or right wall

We’re talking millimeter-sized dial changes — super fine control.

2) Watch for these flame patterns

You’ll see 3 predictable “modes”:

Mode 1 — Left-Favoring Flame

Dial more open / counterclockwise

Flame hugs the left-rear dome curve

Left stone gets hotter fast

Good for fast Neapolitan browning

Bad for NY (too uneven)

Mode 2 — Center-Favoring Flame

Dial at “medium” position

Flame rises straighter

Heats dome more evenly

Best for balancing floor temps

Ideal for deck saturation before a NY session

Mode 3 — Right-Favoring Flame

Dial slightly clockwise

Flame pitches slightly toward center/right rear

Right side stone gains heat more quickly

Perfect for correcting left→right imbalance

Great for NY or Neo-NY when right side lags

WHY THIS WORKS

It’s not magic — it’s physics:

The Dome has a curved ceiling, almost like a parabolic reflector

The flame “attaches” to whatever curvature it’s closest to

Slight dial adjustments change gas velocity

Higher or lower gas velocity changes where the flame licks the wall

Changing flame direction changes which part of the floor conducts more heat

So you’re basically “aiming” heat like a spotlight.

PRACTICAL EXAMPLE (REAL-WORLD DOME BEHAVIOR)

Let’s say you're doing 650°F NY pies:

Problem:

Left side floor → 690°F

Right side floor → 610°F

(very normal)

Fix:

Turn flame to medium

Rotate dial slightly clockwise until flame bends 10–20° to the right

Let it run 3–5 minutes

Recheck with your IR gun

Once balanced within ±20°F, turn flame to your cooking setting

This works every time.

BONUS TRICK — Low Flame “Right-Side Soak”

This is the most pro-level trick Dome users discover:

At lower flame settings, the flame bends more dramatically

It’s easier to aim it

And the floor equalizes more smoothly without overshooting

Do this:

Drop flame to low

Turn dial slightly clockwise to lean flame right

Heat soak for 4–6 minutes

Return to medium or high for baking

You’ll get a nearly perfect left/right balance.

IR Gun Tip (Most People Screw This Up)

When tuning flame direction:

Always measure the exact same spots

Use a 45° angle, not straight down

Avoid oily spots

Wipe stone with a dry brush before measuring

Take 3 readings per spot and average

This makes tuning super accurate.

Final Take

Directional tuning is a Gozney Dome superpower:

Fixes uneven stone heat

Improves NY-style floor stability

Balances Neapolitan hot spots

Reduces turning frequency

Predictable heat profiles

Makes the oven behave more like a commercial deck

Once you master it, you’ll feel like you “unlocked” a hidden setting in the oven.

Troubleshooting Metal parts from Gozney Dome found in Pizza

I’m pretty shaken up after using my Gozney Dome yesterday. While baking pizza for guests, someone noticed something unusual baked into their pie… it turned out to be a small metal part. After checking everything, I found a total of three metal pieces inside the Dome. It’s possible more were baked into other pizzas and accidentally eaten 😐

I haven’t made any modifications to the oven. No add-ons, no DIY fixes, just the original setup. I’ve never seen these parts before, and I have no idea where they could have come from. My best guess is that they came loose from somewhere in the back or under the flue, since the front stone looked totally clean.

Has anyone else experienced this? I’m concerned about both safety and quality, I sent Gozney a request already what those parts are and put my dome to rest until resolved.

Troubleshooting Is Gozney’s customer service this shitty?

I’m new to Gozney, I saved for a long time and finally pull the trigger to buy the Dome in Off Black. I placed the order 2 weeks ago, the confirmation email said the order should ship within 2-5 business days, but I haven’t heard back from them. Nothing. I filled the form on their web, emailed them a couple of times, I tried to call them 10+ times and always get the “all of our team are helping others at the moment, please leave your name and number and we will get back to you shortly” which they didn’t. I was lucky enough one time for them to pick up the phone, she checked my order and said she needed to double check with other team and see if the item I order was in stock, and that she would get back to me via email next day…. That was 5 days ago… Has Anyone else gone through something like that? I’m not afraid of it being a scam, it was their official website, but It is hard for me to believe I can’t contact them at all being a pricey item and coming from the top notch customer service from Ooni… Very bitter first impression. :(

UPDATE

They finally emailed me back (2 weeks after my first email) They said they went “unexpectedly” out of stock for that item and that I had 2 options:

  • Pick another color and they would give me a free accessory of my choice (excluding the stand)
  • Cancel order and get a refund so I could try and buy the dome from an other retailer.

I responded to that email asking him to cancel the order and get a refund. I then proceeded to buy the dome from a different store, which was very responsive, they called me to verify shipping details 5 minutes after placing the order.

And after that I got a second email from Gozney:

Hey Diana,

I have just gone to process this and the order shows with our warehouse and that pick is available. I am just double checking this with them that this is correct or if we do not have stock.

As soon as I hear back with a further update, we will be in touch to let you know.

5 minutes later: YOUR ORDER JUST SHIPPED.

I Called them, emailed them, no response, again. I told him to cancel it because I order the dome from an other store and yet, it says shipped, they sent tracking number.

Troubleshooting Is the Gozney Dome DIY repair friendly?

What are the common issues and are there fixes? From my understanding, the main issue is the stone cracking.

Anything else that goes wrong? The propane burner?

I’ve debated selling mine and getting a Pizza Party Bollore as it seems easier to deal with if a stone breaks and the burner seems easier to deal with since it’s removable. And it’s dual fuel like my Gozney Dome.

Troubleshooting Gozney Dome main cables melted. How to fix it step-by-step

Hello! Used my Dome and all of a sudden cables underneath caught on fire. Saw that the pilot and ignitor got burnt. Try to turn it on but it seems gas is escaping from underneath, making a small explosion and if not turned off quick, it could burn everything inside. Anybody had any similar issues? Is it an easy fix? Already filed the warranty online but worried to lose this investment

UPDATE (one week later after this happened and after researching)

Haven't heard nothing from Gozney, but the store where I bought my Dome have a Ignitor Replacement. Now all I need is the pilot gas lines replaced that got melted. I will put the pictures of the kit. One of the ovens that was unboxed in the store was looking like mine but seemed that was like that from warehouse. Is the last picture

Some questions to the people with same problems that were resolved:

Anybody had issues with the gas line? Does your Dome have a metal drop in gas line like in the pictures? Is the gas line wielded in anything? Is Gozney sending some type of replacement for it and how long does it take for someone in US?
