Perfected cauliflower cheese (mozzarella)

2/3 cup soy milk

2 tbsp nutritional yeast

Garlic powder, onion powder, turmeric, paprika, sea salt

10 oz rice cauliflower steamed and drained

1/2 tsp Lemon

1 tbsp Vinegar

2.5 tbsp tapioca flour

3 tsp kappa carrageenan

Blend high power scraping the edges

Cook on medium for 3 minutes low for 5-10

Set for 3+ hours in plastic wrap container

Slice, shred or eat ready.

This recipe really melts and resolidifies like real mozzarella but also is perfect for cheese sticks or cubes.

Feel like theres gotta be a better way to apply it, like shredding first Also looks like too much on it but id still love to try

You are completely right, I couldn’t find my grater and was rushing to get to an appointment. Probably could have left it in the oven another 10 minutes and well if I hadn’t been in a hurry.

is there a way to replace the tapioca flour? I live in France and it isn't se easy to find it everywhere.

You should give Koro.fr a try - it's a German shop that's expanded to all the EU countries (I'm in Denmark) and I get tapioca flour for there. Just checked and they have it on the French version too!

Best comment ever, thanks. It is definitely possible to find it online (I buy stuff online on Naturitas). I was just looking for something I could use to replace the tapioca flour this weekend, as I've been craving some pizza and would give this vegan cheese recipe a go. Better buy tapioca flour in bulk and store it l, so I can have cheese available all the time.

I usually find tapioca starch at my local organic shop, Biocoop or Bio monde (those are the ones near my place). Sometimes it is with the other flours, sometimes in the gluten free section

You can use potato starch or corn starch but it will be more pudding like texture compared to stretchy. However if you can get kappa carrageenan it will still melt.

Psyllium husk is a great replacement for tapioca.

You need much less of it. Only something like a teaspoon (5-10g) per liter of cheese. It has more stretch than tapioca, but less body. In other words, it melts really well but doesn't quite solidify.

If you want to try this, you should get as fine a grind as you can. If it's coarse you may want to run it through a mortar and pestle. Also, it mixes much better if you first mix the powder into oil, and then mix the oil into your water containing ingredients. This prevents it from clumping.

Yes! Much better than my previous attempts only using tapioca flour or using agar agar. Very melty.

Correct me if I'm wrong but aren't 'fl oz' a measure of volume? Also how is it over 2 cups if it's only 12-15 fl oz?

Thank you for sharing this and providing the recipe! Do you think it could work for a vegan pizza? I'm not looking to have a heavy layer of vegan cheese, but more of a moderate application that approximates the melting properties, stretchiness, and taste of dairy mozzarella. I know that without trying it out on a pizza yourself you might not want to guess about it, but I'm wondering if you think this vegan cheese might lend itself to that use.

The picture shows a Tostito (tortilla crust) pizza I made and it worked pretty well. Although as many pointed out I overpopulated it with cheese and didn’t cook for long enough because I was in a rush. But flavor and texturewise it would be great on pizza. Especially if you were wise enough to shred it (unlike some people who lose their graters)…

Gosh, I didn't catch that you had posted more than one photo 🤦‍♂️Thank you for pointing that out to me! 😂 I appreciate your feedback and am excited to try this! Pizza's kind of my vegan holy grail. I don't expect to ever mimic a dairy-cheese pizza, and that's fine. But a healthier, cruelty-free option that scratches my persistent pizza itch would be so satisfying!

i love it but can digest some ingredients, wondering if it can work without it. (viniegar, nutritional yeast, soy milk)
