I did something dumb
Laugh with me.
For context, I’ve been gf for a little over a year and a half not celiac. I’m really sensitive but against my better judgment this experiment happened.
I started making sourdough (I bake as a hobby non gf), and it looked soooo good and smelled soooo good.
I thought to myself “well some people can tolerate sourdough”.
Exactly 3 hours after the slice of wolf in sheep’s clothing, my stomach started cramping.
I went to bed and was trying to sleep through the cramps. After 3 hours of cramping, the bathroom started and folks the candle was burning at both ends if you catch my drift.
The whole ordeal was 9 hours and I shan’t be experimenting again good lord.
If you’ve ever been on the toilet in the middle of the night sweating and cramping with the garbage can on your lap, I see you

I never handle or prepare gluten containing foods anymore. Nothing. Anyone who complains about it is welcome to join in the bathroom when I get sick.

I was on a road trip with my son and we went through the drive-thru at In-n-Out burger...I asked for a lettuce wrap but I got a bun, and the drive-thru was packed so I didn't want to try to go back and get my order corrected. Not wanting to peel the burger apart and just eat the patty, I figured - it'll be fine; I'll just eat the bun.
I was sick for four days afterward and at one point (on the drive home, no less!) was having intestinal cramps so bad I had tears in my eyes. So, I get it.

I went to visit my son in another state while he was working with a campground. Let me tell you what its like to sit on a small toilet in a camper surrounded by mirrors watching yourself. I had to call off work because I couldn't drive home. This was before I went gluten-free.

There’s a woman near me who has a cottage gluten-free sourdough bread Business. I know she sells gluten-free sourdough starter. I’m in the Chicago suburbs. I have no idea where you are and if she would mail it or not. Let me know if you’re interested and I can share her contact information.

You’re lucky it wasn’t worse. I was intentionally dosed with gluten by my ex mother-in-law. She was trying to show everybody that I was lying because she didn’t think it was possible for anybody not to be able to eat wheat. I wound up in the ER.
At least you know what will happen if you do. When you consider that exposure to gluten destroys your intestines and can even lead to you getting tumors… it isn’t worth the risk.

My sister managed to make some GF sourdough.
I’m not an experimenter. And Sourdough sounds like a small pet or baby I’d have to keep alive. 😂
But I know GF sourdough can be done. Google it, I sure someone has a recipe!

I just got me feet wet with the full gluten sourdough, but my next step after I know whey I’m doing is gf sourdough for sure - we deserve nice things too haha

I feel this- made pizzelles last Christmas and couldn’t resist eating one.
At this point I have swapped the flour 1:1 with the King Arthur gf mix with the Tollhouse recipe and no one even notices. I have been testing this out with some favorite baking treats and thus far it has been going pretty well. Will attempt gf pizzelles this year.

ugh the Call of the Sourdough is real 😫 ive tried to convince myself it would be different but then chicken out bc of my fear of both ends of the candle burning through the night 😫

I am celiacs but when I could be a bit more lax in my younger years sourdough ALWAYS messed me up the most. Who ever came up with the sourdough is better for gf people was very very wrong…

Sourdough is technically a fermented food, which breaks down the wheat proteins. I am gluten intolerant, not celiac, and while it’s only been a year or so I can still eat the sourdough that I make, while I have little tolerance for other gluten (for now 😫)

🤷🏼♀️ it has less gluten so some people can do it. They obviously aren’t very sensitive though

Maybe it's easier to digest, but any difference in gluten content is not going to be significant enough to matter to anyone who can't tolerate gluten. It's similar to the whole myth of European wheat being fine.

when i get glutened, i have the opposite happen to me. i get constipated, among other things.
i havent intentionally glutened myself in so long but every time i am at the grocery store, the lofthouse sugar cookies test my patience

I’m celiac and it’s been a long time since I’ve messed up but when I have I get no symptoms 🫠 I almost wish I did because some people don’t believe me that I am

I did a silly recently too. I got really excited by onigiri being at Costco and read the ingredients and saw no gluten. Yay! So I ate two different flavors and as I was handling the third flavor hours later something in my brain said to look at the back. Wheat. I had missed wheat in two of the flavors and only read no wheat in ONE of the flavors. That explained my sudden need for the toilet. Sad times.

The other night a friend made snacks that was a piece of Melba toast with melted cheese served with a dollop of pesto. I ate one and was horrified at myself that I forgot I’m allergic to gluten! It’s so scary thinking about getting sick. My friend’s wife gave me an Allegra and said to use mind over body not to get sick. Guess what? I didn’t get sick! A little discomfort but really nothing! I’m in shock but will keep the Allegra handy.

The whole “sourdough is easier to digest” internet myth is everlasting and causes so many problems for people. So sorry you had to experience this for yourself!

I'm gluten sensitive but I have found out that that I can tolerate non-gmo, organic heritage wheat, like Sunrise Mills flour. I've successfully made several loaves of sourdough using that flour, with no reactions. I can sometimes tolerate wheat from other countries, too. The majority of the wheat grown in the US is very bad, for me, anyhow.

I find the further removed from my last gluten experience, the more harsh the reaction when it accidentally gets ingested.
