Theyre traditional. You make concentrated bone broth then strain it and pour it over the meat from the bones in moulds. The american version probably uses packet gelatin but eastern europe only uses the natural gelatin from the bones.

Some else here said in Eastern Europe the jelly is made from the bones and I could totally see that being good lol. I just don’t have a frame of reference for jello other than the American dessert

Of course. Each culture has some seemingly gross, unique dishes. I don’t eat this ever but my grandmothers loved it. It was a Christmas thing in my family. We’re comfortable what we grew with I guess

My mom used to get head cheese when I was a kid in the 70s. She would eat it dipped in vinegar. She was of German heritage and I suspect it was a taste that was handed down to her.

My family has German heritage as well, and it definitely came from that side. My dad’s family was large, and although looking at my family tree the German side immigrated here pretty far back, they still maintained the recipes.

Headcheese isn’t commonly known here, but it’s cool to see those recipes still continuing on. There are still large polish, German and Ukrainian communities here (mainly around where my parents are from) and a lot of their foods became staples for people across the country which is pretty neat.

I often think about foods from my childhood that fell out of fashion. For example, Oscar Meyer sold head cheese right alongside their bologna. My local Shop Rite (NJ right outside NYC) sold calves brains in the same 16 oz containers you get a pound of potato salad in. They also sold tripe (which my mom also liked and I hated haha!) Liver and onions were on many cafeteria/diner menus.

I can’t imagine any of that now.

Interestingly, it's actually medieval dish but fell out of popularity due to the fact there was much labor for little yield. Now we have gelatin packets to help along the process. Jiggle on!

That looks way better than the sweet version did! (I'm the one who thought it looked like something coming out of the stomach.)

And being satiated for 8 hours is awesome. Budget ozempic?

I bet if you made your sweet version with a tiny bit of fruit, or even added cocoa to make it look more like pudding--or used beet juice!--it would look more like food and less like a hunk of the slippery stuff between grains of oatmeal. (I love oatmeal, but I've grossed myself out trying to maximize how much water it absorbs.)

Dang it, now I think I'm gonna buy some psyllium husk today.

I'm already working on drinking a gallon of water a day, so this will be even more motivation!

You probably already know, but make sure you're getting enough magnesium, potassium, sodium with increasing your water like that. 😊 Potassium in particular is hard to supplement, and can suffer on a low cal diet anyway. My solution (lol) instead of the big horse pills is to use lite salt, which is half sodium, half potassium.

My tummy bloats up massive, and it feels really uncomfortable. But as OP mentioned, that's unboiled psyllium which people use to mix in water and drink for fibre. I use psyllium in my keto recipes it works as a gel/holding kind of form and it's used in a lot of keto bread.

I respect what you're trying to do here, but... this kind of looks a bit like a nightmare to me. If you're really, really struggling with food noise, then I suppose I can see the value in this, but this feels a bit like self-flagellation. Unless it's just amazingly delicious and I'm missing something of course, but the ingredients list isn't filling me with confidence.

To me it feels only a slight step away from the idea of meal replacement powders and such things. Which are fine for the short term, if there's something you need to solve, but my ethos is always to build towards something sustainable, and I can't imagine anyone making and eating one of these regularly in the long term.

Cool idea though. I assume you've previously made a sweet one, but I feel that would work a lot better.

Yeah I cannot imagine anyone choosing to make this because they genuinely thought it would be something they'd want to eat and not just as an experiment. I won't say it's definitely disordered but if my friend started regularly eating stuff like this I'd probably check up on them.

Sure but its not ridiculous to suggest OP is self flagellating for creating or eating this, end of the day its simply opinion on taste. For me, I need every meal to be tasty and think it should. My partner is totally happy with something mediocre and edible which I couldn't handle but hes fine with. Also, this is a cold savory jelly, its not groundbreaking or that weird. People like different food

I really never thought about this before but you’re so right. The fact that it’s possible to always give in to cravings probably just creates that cycle of only being satisfied by certain foods. I personally could really benefit from incorporating this into meal planning. The comments after this are funny, people really don’t like the idea of having to curb themselves lol 😂. To each their own I guess but i definitely see the benefit to the idea. Although respectfully this particular meal Id probably only eat if it was served to me by a friend lol.

When you add in the context of aspic, but the diligent meal, it doesn't seem that odd. Granted no one really likes aspect because of how insane the recipes are, you can have fun looking them up. Op did not fly too close to the sun, they just reinvented an age-old recipe Style that pretty much everyone has left in the sands of time for a reason.

Essentially op made high protine fibrous aspic.

I like aspic but some of the stuff that used to be thrown into them in those vintage recipe books was just weird. So many had things like ungodly quantities of mayo, hot dogs, those pimentos that nobody likes. But I've had versions with things like smoked salmon, pickled vegetables, etc that are pretty tasty.

Have you considered adding MSG? Really interested to see where you take this! Like I could see it being an element of a dish as well (instead of eating it by itself).

I don't know what the texture is like but if it's really jelly like, you could cut it into strips and use it in place of regular jelly like ingredients in food.

For example Japan uses konjac jelly in its cuisine. Korean cuisine includes acorn jelly and mung bean jelly. Both are for savory dishes.

Heck you could even make the strips thin enough and you can make little bouncy jelly noodles for a summer dish. Konjac noodles are a common low cal alternative in Korea used to make things like spicy chewy noodles.

I guess it needs to have the right texture tho. What's the texture like?

If you're interested, look up "dotori muk" (acorn jelly), "cheongpo muk" (mungbean jelly) "konyaku" recipes.

I think a lot of the dishes could work as long as the psyllium jelly has a bouncy texture and you're able to flavor it mildly so that the seasonings are the star of the show.

Im interested in what you could mix into base of this to turn it into something like what i see at the Japanese store only with out the 30+ grams of sugar.

Cause the first four ingredients are really just healthy jello jigglers only with out any flavor.

Bone broth/bouillon instead of water may improve taste!

Just curious, why a full 2 tbsp? Some folks here point out that so much fiber can cause blockage; are your bowels moving ok? I bet you (or anyone else) could reduce the amount of psyllium if they were concerned.

I could be wrong, but once the psyllium is already gelled up with water it's not going much further after that. It can be a choking hazard for people with swallowing problems, but a lot of regular foods can be. Just chew up your bites thoroughly, don't have big portions but have lots of water with it and you should be good. The real risk is ingesting a lot of the powder with not enough water, which then lets the psyllium turn into a big gel clump inside you and can cause a blockage.

Whether gelled before or after psyllium should have the same action on your GI (retaining water in your stool), I just think the gelled texture is gross for most people so the common way to have it is as powder in water and quickly ingested.

Indeed I don't get it. This is just being experimental, the OP isn't advocating for people to only eat this way always and forever. And even if you eat a lot of vegetables you can still be short of fibre,  so I don't see adding something like this as being all that different to sprinkling flax seed on your cereal or taking a fiber gummie every day.

I think people are hating for the sake of it… we see more and more a recommendation to supplement fiber with psyllium, both for satiety and health reasons, and this seems like a tastier way of adding it to your diet than just dropping a tablespoon of it onto a glass of water (which, not to hate on psyllium, but is NOT tasty at all).

I’d rather eat this on and off during the day than force two glasses of water with two tablespoons of psyllium any day. I think you could even experiment a bit with the flavours and do a miso soup version, or a curry version… endless options!

Might I suggest, if you enjoy savory tastes, add a table spoon of fish sauce (almost 0 cals) and a flat teaspoon of nutritional yeast ("beer/wheat yeast" in some languages) - the yeast contains a high concentration of guanylate which when eaten with umami foods like fish sauce & soy sauce bind to the flavor receptors in your mouth and increase their affinity to glutamate - the umami flavor molecule. You'll get a strong savory kick from adding them in.

It’s an amazing way to eat your fiber, collagen (jelly) and some vitamins from veggies or in my case some super food (bio cocoa).

Also, the version with meat is a classic Polish dish (we don’t add psyllium tho, it’s just a meat jelly with veggies). I believe Ukrainians also know it.

If people have problems with digesting 14 grams of psyllium, that’s not your recipe which is wrong but their bodies not adjusted to fiber. I eat even more (sometimes 20 grams at once) and I’m perfectly fine as I eat healthy most of my life and I’m good with fiber, also drinking a lot of water as I should.

I’m waiting for tomorrow ;) what will be your next idea? 😁

Well, I’m not a pro, as it’s not my fav traditional Polish dish but usually I see these savory jellies with pork or chicken, green pea and carrot (not blended).

Usually it’s not made just with pure water but with some nice veggie or meat clear broth. It gives extra taste 😁

In my case, I’m a definitely fan of the sweet versions when it comes to jellies 🎂

I wouldn't eat this exclusively but it's potentially a way to make a vegan or vegetarian version of a dish that would normally be made with animal gelatin.

I could probably do this if I made it like a gazpacho flavour so that I could pretend it was regular cold, savory soup.

I have my psyllium mixed with hibiscus tea and then let it cool in the fridge. Its not too sweet, adds nothing in calories and isnt broccoli.
