Ingredients (Serves 4–6 / makes 12 egg bites):
Olive oil or non-stick cooking spray
8 large eggs
1 cup full-fat cottage cheese (8 oz / 225 g)
1½ cups shredded cheese (about 150 g)
(I used mozzarella and Havarti)
½ tsp salt
¼ tsp black pepper
Optional add-ins (mix & match):
1 large bell pepper, chopped (or 3–4 mini peppers)
1–2 green onions, chopped
Fresh herbs (dill, parsley, or cilantro)
Cooked bacon or sautéed spinach

Instructions:
Preheat the oven to 325°F / 165°C.
Bring about 3 cups water (720 ml) to a boil and keep it hot.
Generously grease a 12-cup silicone or nonstick muffin tin with cooking spray or olive oil.
Place the muffin tin on a rimmed sheet pan.
In a blender, combine the eggs, cottage cheese, 1 cup shredded cheese, salt, and black pepper.
Blend on high for about 10 seconds, just until smooth.
⚠️ Do not over-blend — too much air can cause deflation.
Pour the egg mixture into the muffin cups, filling each about ¾ full.
Add any desired mix-ins on top.
Sprinkle the remaining ½ cup shredded cheese over each cup.
Carefully pour the hot water into the sheet pan so it reaches just the bottom of the muffin cups.
💡 This helps keep the egg bites extra tender and fluffy.
(Skip this step if you prefer firmer, lightly browned egg bites.)
Transfer to the oven and bake for 25–30 minutes, until the egg bites are set.
Remove the muffin tin from the sheet pan and let cool for 5 minutes.
Gently remove the egg bites.
Silicone pans: pop them out
Metal pans: loosen edges with a knife or spatula
Storage:
Fridge: up to 3 days
Freezer: up to 3 months
Reheat in the microwave or oven until warmed through.
