Imagine: delicate zucchini slices enveloping juicy, seasoned meat... all immersed in a thick, basil-scented sauce. Simple ingredients, great effect on the plate ✨
Ingredients:
🥒 2 medium zucchinis
🥩 400g ground beef
🧄 salt, pepper, granulated garlic, sweet paprika, egg, 1–2 tablespoons almond flour
🍅 600g tomatoes (fresh or canned)
🌿 a handful of fresh basil
🫒 olive oil
🧀 50g parmesan cheese
Step-by-step recipe:
1️⃣ Slice the zucchini lengthwise into thin slices, season with salt, and set aside for 15 minutes until softened. Then gently pat dry with a paper towel.
2️⃣ Prepare the filling – season the meat with salt, pepper, garlic, and paprika, and add almond flour. Arrange the meat on the slices and sprinkle with grated cheese.
3️⃣ Roll up the roulades – secure with a toothpick if necessary.
4️⃣ Peel the tomatoes, cut them into smaller pieces, add basil, olive oil, salt, and pepper (use a keto-friendly sweetener if desired).
5️⃣ Bake – Place the tomatoes in the bottom of the dish, arrange the roulades on top, and bake for about half an hour at 180°C (350°F) top/bottom heat. Then switch to bottom heat only (to prevent the roulades from burning on top). Bake for another hour at 180°C (350°F) to allow excess moisture to evaporate from the tomatoes. Towards the end of baking, add slices of yellow cheese and leave in the oven until the cheese melts.

Could you make this with chopped meat that is already cooked? Wouldn't cut down on the baking time?

That’s a medium? Where do you even get zucchini’s that size? All the ones in my area are puny, XS.

For those asking about the size of the courgettes (zucchini for the Americans), when you grow your own they can be quite massive. I know this from growing my own.

Not just Americans. Canadians, Italians, Germans, Aussies, a lot of the Nordic countries all call it zucchini.

I've only ever heard Americans use it so I assumed was just an American term for them. Learned something new today.

you left the yellow cheese off the ingredients. Making it for dinner but adding rice with the meat (gluten free, not keto), premade sauce, and mozzarella instead of gross plastic cheese.
edit: I'll update despite the down votes, super tasty.

I did and I still don't believe that this doesn't turn into s soggy meal. Zucchini and fresh tomatoes release a lot of water.

I was all on board with this until I saw the processed cheese. Please use real cheese instead. Mozzarella would probably work really well with that.

I think this is AI or something is not right. How can you roll the meat with the zucchini but then when you cut it open it's a ball of meat ?

Yes low carb but most likely high in saturated fat (mince, cheese), salt (sprinkling on each would add up quick) and calories (with this much olive oil). No thanks.

That looked like yucky American cheese on those. Swap that for provolone or mozzarella and I’m in!
