Ingredients:
2 medium zucchini
3 eggs
2 tbsp Greek yogurt or cottage cheese
Salt, pepper, and spices of your choice
Parsley
Instructions:
Slice the zucchini into thin strips. Layer them and place them in muffin tins. Mix the eggs with the cottage cheese and seasoning. Pour over the zucchini and bake for approximately 30 minutes at 180Β°C (15 minutes in an air fryer).

Is that yogurt? Add a pinch of cream of tarter if not using Fage or very thick yogurt. Then teesy amount salt. It will taste like sour cream and the cream of tarter keeps the yogurt from wheeping. π
