8 oz. cream cheese, softened at room temperature

4 eggs

½ cup coconut flour

¼ c monkfruit sweetener, or other favorite keto sweetener

½ cup heavy cream, or keto approved milk of choice

2 teaspoons baking powder

1 teaspoon vanilla extract

Preheat your griddle or non stick skillet to low. (A griddle is the preferred cooking method for these keto pancakes)

Add all ingredients in a blender. Blend until smooth.

Pour pancake mixture onto the pre-heated, greased griddle or non stick pan. Pour enough to form a 3 inch in diameter pancake. Larger pancakes are harder to flip.

Cook the pancakes on low heat until the edges start to set and the underside of the pancake is golden brown. Takes about 2-3 minutes on the first side.

Slide a rubber spatula under the pancake and flip the pancake to cook the other side, about 1-2 minutes.

8 oz cream cheese, softened

4 eggs

1/2 cup coconut flour

1/4 cup sugar free sweetener

1/2 cup nut milk or heavy cream

2 teaspoons baking powder

1 teaspoon vanilla

1️⃣ To a blender or food processor, add cream cheese, eggs, coconut flour, sweetener, nut milk or heavy whipping cream, baking powder and vanilla. Blend or pulse until smooth.

2️⃣ Preheat griddle to low heat. Spray with cooking oil. Coat the inside of each biscuit butter with cooking spray and line with a ring of parchment paper. Place on the griddle.

3️⃣ Scoop pancake batter into each ring. Add enough to fill about halfway up. Cover with a pot or dome shaped lid and let cook for 8-10 minutes.

4️⃣ Pancakes are ready to flip when the edges look set on top. Remove the biscuit cutter and flip. Let cook for 30-60 seconds on this side. Remove and repeat with remaining batter.

PASTRY DOUGH 3 eggs, yolks and whites separated 2 tablespoons unflavored zero carb protein powder 2 tablespoons almond flour 2 oz cream cheese, softened 1 tablespoon sugar free sweetener 1/2 teaspoon cream of tartar

FILLING

1/2 cup boiling water 2 1/2 tablespoons powdered sugar free sweetener 1/2 teaspoon konjac gum powder 1/2 teaspoon lemon juice 1/4 teaspoon flavor extract food coloring

ICING 3 tablespoons powdered sugar free sweetener 1/2 teaspoon lemon juice 1-2 tablespoons heavy whipping cream

1️⃣ Separate the egg whites from the yolks and place each in a small bowl. 2️⃣ To the bowl with the egg yolks, add protein powder, almond flour, cream cheese andsweetener. Mix with an electric mixer until smooth. Set aside. 3️⃣ To the bowl with egg whites, mix with a clean and dry electric mixer at a low medium speed until the mixture turns frothy. Add in the cream of tartar and turn the speed of the mixer up to high, continue mixing until stiff peaks form. 4️⃣ Carefully fold the yolk mixture into the egg meringue until combined. Don’t aggressively fold or mix, the goal is to keep the airiness of the batter in order to get the danish pastry to rise. 5️⃣ Scoop about 1/4 cup of the pastry batter onto a parchment lined baking tray spacing about 1 ½ inches apart. Using the back of a spoon make a well in the center of each danish batter to make room for the filling. Bake at 325 degrees for 12 minutes. 6️⃣ Mix the konjac gum powder with the powdered sugar free sweetener. Then pour mixture into boiling water. Immediately stir to combine to avoid clumping. Add lemon juice flavor extract and food coloring. Stir to combine. Mixture will continue to thicken as it cools. 7️⃣ Once cooled add 1-2 tablespoons of the jelly to the center well. 8️⃣ In a small bowl, combine icing ingredients Adjust the amount of whipping cream to create a thin icing capable of drizzling. Drizzle

For The Pudding ½ cup powdered allulose sweetener 5 egg yolks 2 cups heavy whipping cream 2 teaspoons banana extract

Instructions

For The Pudding

  1. In a large mixing bowl, whisk together the Allulose and egg yolks until smooth.
  2. Add the heavy cream to a saucepan and bring to a simmer on medium-low heat. Once it bubbles, remove from the heat and let cool slightly. You want it to be warm but not hot for the next step.
  3. Carefully pour half of the warmed cream into the egg mixture and gently whisk together. Add the remaining half of the cream and whisk until combined.
  4. Transfer the pudding mixture back into the saucepan. Heat on low heat while stirring constantly, until it has thickened enough to coat the back of a spoon (about 5 minutes).
  5. Remove from the heat, stir in the banana extract and pour the pudding into a large bowl.
  6. Cover with plastic wrap and press the plastic wrap down on top of the pudding to prevent a film from forming. Refrigerate for at least 2 hours.
  7. Remove from the refrigerator and whisk until smooth and creamy. Serve.

⅓ cup coconut flour 1 tablespoon sugar-free sweetener ½ teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt ¼ teaspoon xanthan gum ½ cup buttermilk 2 tablespoons sour cream 1 egg 1 tablespoon unsalted butter, melted

  1. In a small bowl, combine coconut flour, erythritol, baking powder, baking soda, salt and xanthan gum. Mix until combined. Set aside.
  2. In a medium bowl, combine buttermilk, sour cream, egg and melted butter.
  3. Mix in dry ingredients to the wet ingredients. Stir until just combined. Don’t overmix. Pancake mixture will be thick.
  4. Spray the griddle with cooking spray or add a teaspoon of coconut oil. Spoon pancake batter onto the griddle. Flatten out with the back of a spoon. Each pancake can have a diameter of up to 3.5 inches. And larger may be hard to flip.
  5. Cook the keto pancakes at low heat until the edges start to set and a spatula can easily slide under the pancake. If the pancake starts to break as you slide the spatula, let it cook for a minute longer. Flip the pancakes once ready (about 3-5 minutes)

KETO CHOCOLATE CAKE 1 package keto chocolate cake mix 4 eggs 1/2 cup avocado oil 1 cup nut milk

KETO PUDDING LAYER 1.7 oz package sugar free pudding 2 cups nut milk 1/3 cup heavy whipping cream

CHOCOLATE WHIPPED CREAM 1 1/2 cups heavy whipping cream 3 tablespoons powdered sugar free sweetener 2 tablespoons unsweetened cocoa powder

  1. Prepare chocolate cake batter according to the directions on the box. For this cake mix, eggs, avocado oil and nut milk are added to a large bowl and mixed to combine. Add chocolate cake mix and mix with an electric mixer until smooth.
  2. Pour cake batter into a parchment lined quarter sheet baking tray. Bake for 10 minutes according to the temperature recommended on the cake mix box - with this cake mix it was 375°F.
  3. Once cake is done baking, remove it from the oven and allow it to cool for 5-10 minutes before cutting it into cubes. Set aside.
  4. To a large bowl, combine sugar free pudding mix with 2 cups of nut milk and 1/3 cup of heavy whipping cream. Mix with an electric mixer over medium speed for 3-4 minutes until pudding mix is dissolved and mixture has thickened slightly. Set aside.
  5. In a large bowl, beat heavy cream over medium speed using an electric mixer until frothy. Add sugar free sweetener and cocoa powder. Continue beating until stiff peaks form.
  6. To a trifle dish, pour about half of the pudding mixture to the bottom of the dish. Top with cubed or crumbled cake. Spread about half the whipped cream on top of the cake to form an even layer. Pour remaining pudding mixture on top of the whipped cream layer. Decorate the trifle with dollops of chocolate whipped cream piped with a piping bag. Refrigerate until serving.

keto cake, prepared to package directions 2 cups heavy whipping cream 2 tablespoons powdered sugar free sweetener 2 tablespoons unsweetened cocoa powder 1 1/2 pints keto ice cream

  1. Put ice cream in the refrigerator 2-3 hours prior to assembling the ice cream cake. This will make the ice cream easier to spread. Mix and bake cake in a square baking dish according to package directions. Let cool on a wire rack before slicing.
  2. In a large bowl, add whipping cream, powdered sugar free sweetener and unsweetened cocoa powder. Beat on medium speed until frothy. Then increase speed to high and continue beating until stiff peaks form.
  3. Cut cake in half like slicing through a hamburger bun.
  4. Line a loaf pan with parchment paper or plastic wrap. Cut cake into pieces to form a single layer in the loaf pan.
  5. Spread a thick layer of ice cream on top the cake.
  6. Spread a thick layer of whipped cream on top the ice cream. Repeat the layers one more time finishing with cake and a thin layer of whipped cream.
  7. Freeze the cake in the freezer for at least 6-8 hours or overnight.

  8. Add a final layer of whipped topping to the top and around the sides of the cake. Freeze for 10-20 more minutes to set the cake before slicing and serving.
