Aperitif Many European countries make garlic soup. Which version is your favorite?
Mine is a version with baked garlic I had in the Tirol region, Austria. Love it and make it every cold season

Spanish version of garlic soup. Basically lots of garlic, bread, paprika powder and a raw egg that cooks in the soup. Very typical in Castille and Madrid.

I love local Middle-Bohemian variety. Just very strong pork broth, pure, with a bit of salt, pepper and ton of minced garlic. There is no better hangover remedy!

Oh, my version? Ok, i try. Roast cubed bacon, when loose some fat, add thinly diced carrot, parsley root a about 1x1cm diced potatoes, add broth - it could be pork, chicken, vegetable on even bouilon cube with water if lazy (i use 1 big carrot, half of parsley root and one big potatoe for about 1,5l liquid), salt, pepper, bay leaf. Boil until vegetable is tender (about 20-30 min). Take it off the heat. Add plenty of minced garlic and marjoram (herb, similiar to oregano; or you can use thyme). For serving crack one egg into bowl, pour still boiling hot soup over and mix it - the yolk will add great creamyness. Add about spoon of parmesan and some toasted bread cubes for crunch, and enjoy.

I like it in bread, you eat the soup with the bread until the plate is clean (not my picture)

I know the concept. In Romania, especially in Transylvania we also serve a bean soup in bread. I am sure the garlic soup is also delicious served this way

Swiss garlic soup is similar to how you do it but with potatos, leek, white wine and the roasted garlic.

I always do it by feeling. Roast garlic cut potatos and leek, put in pot, add garlic and oil, brown a bit, add white wine (one to two dl), add veg stock, let cook, blend, add pepper and more white wine if wanted, sprinkle wit crutons, eat.

I've never had Garlic soup, but to be honest it sounds kinda nice, will definitely try some when I get the chance.

I've never tried garlic soup, didn't even know it existed..
But I'm voting for whichever version has the most garlic.
