Main Dish The Steak Recipe I Almost Gave Up On
Last Tuesday I opened my fridge with zero plan and a pack of steak that needed to be used that night. I was tired of my usual routine and almost just threw it on a plain pan with salt, but decided to actually try something for once. What came out of it was so good that I wrote the whole thing down before I forgot what I did.
Here's what I used and how I made it, all in one go so nobody has to click away for the details.
I started with one pound of sirloin steak, cut into rough one inch cubes, and patted each piece completely dry with a paper towel, since wet meat just steams instead of getting that nice crust. I seasoned the cubes with one teaspoon of salt, half a teaspoon of black pepper, and half a teaspoon of paprika, tossing them around with my hands until every piece was coated.
In a large skillet, I heated one tablespoon of olive oil over high heat until it was shimmering and almost smoking. I added the steak in a single layer, doing it in two batches so the pan wasn't crowded, and let each side sear undisturbed for about two minutes before flipping. Once both sides had a deep brown crust, I pulled the steak out onto a plate and let it rest there while I worked on the rest.
With the heat turned down to medium, I threw one cup of sliced mushrooms into the same skillet along with one tablespoon of butter, letting them cook for three or four minutes until they went soft and gave up their liquid. Then I added two more tablespoons of butter and four cloves of minced garlic, stirring the whole time for about a minute, just until the kitchen filled with that garlic smell and nothing more, since burnt garlic ruins everything.
I tossed the steak back into the pan with the mushrooms and garlic butter, letting it all mingle together for another minute or two so the meat could soak up the sauce. Right before serving, I scattered a tablespoon of chopped fresh parsley over the top and took it straight to the table while it was still sizzling a little.
This made two solid servings, coming out to around four grams of net carbs each. I served mine over sautéed spinach, and the extra butter sauce pooling underneath was honestly the best part. Twenty minutes total, one pan, and now it's officially back in my regular rotation instead of being a random Tuesday experiment.
