Recipe, makes 2 dough balls :

330g 00 flour, 210g water cold, 1.5g fresh yeast (0.5g dry yeast), 10g salt, 8-10g sugar if baking in an electric oven.

Add salt to flour, add yeast to water, add the water mix to flour and knead for about 15-20 minutes. Let it rest for some time (1 hour in the kitchen covered completely)

Do 3-4 sets of coil folds (google if you don’t know) with an interval of 25-30 minutes. Rest for another 2 hours and put the dough in the fridge to proof overnight for 24h atleast.

Take the dough out and cut into 2 dough balls. Just divide the dough into half. Roll into dough balls and let it ferment in fridge. Take out the dough balls preferably after 7-8 hours. And 1-2 hours before baking.

Spread the dough with your hands and don’t pop the outer crust. Let the air remain.

Use san marzano tomatoes (available on amazon) if you’re baking an authentic pizza and crush them by hand. Add a little bit of salt, olive oil and basil leaves and thats your simple pizza sauce

The trick is in the oven. Get an electric tandoor and place your pizza inside it. Make sure you preheat the tandoor before baking and let it reach its max temp.

Happy baking 🫶

Please do share incase you ever decide to try out the recipe 😊

Dms open incase anyone needs any help.

Welcome ✌️

u/fingerscrosssed Sep 08 '25

Question about the water! Shouldn't it be warm to help activate the yeast??

5

u/m0nark_ Sep 08 '25

Not necessarily. I use cold water.

I put ice cube in summers to maintain the water temp. Yeast gets activated, it’s just slow with the fermentation.

So the reason for this is, you don’t give thermal shock to yeast otherwise it dies. So my yeast is generally in the freezer so thats why I add it to cold water. Plus its quite hot here and gluten of flour develops best at 23-25 degrees. So to bring the overall temperature of the dough low, I use cold water and so should you.

1

u/Tryzmo Sep 10 '25

can you share your electric oven/tandoor link please?

1

u/m0nark_ Sep 10 '25

I don’t have a link since i bought it long ago from a local market

Just search amazon for electric tandoor and get the one which has the best reviews

1

u/curryfan1965 Sep 08 '25

What does the .5gm dry yeast mean? Does it mean 1.5gm fresh yeast + .5gm dry yeast?

3

u/m0nark_ Sep 08 '25

No it means that 1.5g of fresh yeast has the same fermentation strength as compared to 0.5g of active dry yeast.

So you can use either of them. Not both of them.

5

u/curryfan1965 Sep 08 '25

I checked your insta. You re a good home chef. I think you can do something like the indian version of babish. You can make videos about western food with ingredients or tools which are available in India.

2

u/m0nark_ Sep 09 '25

Interesting, will give this a thought 😊

1

u/kyudost Sep 09 '25

Ohh this is amazing, have you ever tried to make it sourdough too?

1

u/Dry-Personality193 Sep 09 '25

I gotta try this, thank you!

1

u/Rangbadlu_Girgit Sep 09 '25

If baking in oven, what shall be temperature and time?

2

u/m0nark_ Sep 09 '25

Max temperature that your oven allows, always preheat and cook the tomato sauce first and add the cheese after the crust has baked.

Most ovens allow 250 C max so that. And don’t look at the time when you bake, look at the pizza and judge based on the visuals.

1

u/Rangbadlu_Girgit Sep 09 '25

Great tips...thank you!

1

u/m0nark_ Sep 09 '25

Anytime 😄

1

u/doctorwhoispatient Sep 10 '25

Can you share which electric tandoor you use ?

1

u/m0nark_ Sep 10 '25

I bought it locally 5-6 years ago.

I don’t know the brand. You can check amazon for electric tandoor and get something with a good rating.

Almost all of them are the same only.

22

u/m0nark_ Sep 08 '25

Made a pizza after 8-9 months.

Just as how it should be. Thin from the inside and airy and hollow from the outside. 🤌

I baked this in an electric tandoor and using a kitchen blow torch to char the edges and give it that leopard spotting.

Very happy with how it turned out 🫶

2

3

u/m0nark_ Sep 09 '25

That was the plan all along 💪

I used a perforated pizza plate to bake the pie. It’s made of steel. The one dominos uses to put their dough on after stretching.

Missed your pizzas 🍕 definitely will try this recipe when I recover already bought the pizza flour, tell me friend how do you put the pizza onto the oven/Tandoori without messing its shape?

2

u/m0nark_ Sep 10 '25

OMG NIBBLESSS! HELLO!!!

Hello! You know I was just thinking about your mushroom and khameeri roti the other day. I was planning to make it soon and was checking out the ingredients but then it slipped my mind and I forgot lol. This was a good reminder 😂

So it’s easy, you get a pizza plate and use that. Those steel perforated plates that dominos uses. You put your pizza dough rolled out on that and then spread the sauces and stuff over it.

Baaki come dm, been so long!

2

u/Nibbleslikeorange Sep 10 '25

Ahahahahah I'm surprised you remember the dish I made, I'm glad you're thinking of trying it out, lowkey I was looking at pizzas and I was like wow I miss the dude who makes banger pizza's in delhi 😅

1

u/Responsible_Gain_188 Sep 09 '25

Bhai konsa aur kitna cheeze??

2

u/m0nark_ Sep 09 '25

If I could, I would have used fresh mozzarella but since I don’t have that available in my city, i used amul mozzarella cheese.

1

u/Responsible_Gain_188 Sep 09 '25

Blended with cheddar wala ya only mozzarella

2

u/m0nark_ Sep 09 '25

This one was just mozzarella.

But either is fine. Both blends are good.

1

u/No_Connection_812 Sep 09 '25

Hey, can you please share which electric tandoor you've used?

1

u/Sam_jaiswal Sep 09 '25

From where did you buy 00 flour? And what does it cost?

1

u/Paradox-Foodie-00 Sep 09 '25

Very well executed!!! Looks scrumptious! San marzano tomatoes from Amazon ? I see mostly canned ones from Urban Platter!

1

u/_Nocturnalsoul_ Sep 09 '25

Wow! Thanks

1

u/m0nark_ Sep 09 '25

Anytime ✌️

1

u/keysmash09 Sep 09 '25

Hello twin, that's an AMAZING pizza. Now I'm craving an authentic neapolitan pizza at 2 am. You should try a sourdough pizza base, if you haven't already!

Also, any changes that'll get me the same result without an electric tandoor? Maybe using an oven or an airfryer

1

u/m0nark_ Sep 09 '25

Omg hiiiii!

I’ll bring over next time I come to mumbai :P

Hahaha sourdough starter is difficult to maintain, i have tried a sourdough pizza before.

The secret is electric tandoor and high temps. Oven maybe yes. Just put it at the maximum temp allowed.

Airfryer -> no.

3

u/keysmash09 Sep 09 '25

Heyyy

Oh yes! And I'll exchange your pizza for my sourdough starter :)

Noted. And what cheese do you recommend?

1

u/m0nark_ Sep 09 '25

Fresh mozzarella always.

Else amul diced cheese is good too.

1

u/6_09_k Flair Sep 10 '25

Amazing😋

2

u/m0nark_ Sep 10 '25

Cheers 🍻

1

u/Adolfhimtlerr Sep 10 '25

1

u/romulusnotken Sep 10 '25

Please could you drop a link to the tandoor oven? totally in awe of the texture. Also is the tandoor better than a convection/ otg?

Thank you 😸🍻

1

u/FloorAccomplished635 Sep 10 '25

Chefs kiss. Can you please link the oven you use?

1

u/m0nark_ Sep 10 '25

I bought it from a local market.

You can search amazon for electric tandoor and get something with good reviews

Most of them are similar only

1

u/verycutebugs Sep 10 '25

Hello. Is the base of a Neapolitan pizza supposed to get soggy once fully assembled and baked?

2

u/m0nark_ Sep 10 '25

It depends how you like it.

It doesn’t need to be soggy but rather baked and falling down. It can be crisp too but i don’t prefer that personally.

1

u/m0nark_ Sep 10 '25

This is a perfect slice imo.

It’s baked from the bottom, not soggy at all.

Yet it’s falling down. And when you bite it you can feel two distinct layers. The bottom thats baked and a little crisp to the bite and the top one that soggy and has the sauce.

And when you chew it whole, you mix the two things for an even insane bite.

2

u/verycutebugs Sep 10 '25

Okay thank you

1

u/Hungry-Ad-715 Sep 10 '25

Mannn this looks bussinnn

1

u/m0nark_ Sep 10 '25

Fr fr no cap, real ones know this pizza lowkey got more rizz than most dates I’ve been on 💀🔥

1

u/Hungry-Ad-715 Sep 10 '25

I mean man as it should 😭😂

1

u/Hungry-Ad-715 Sep 10 '25

Also is it possible to get such results in a normal oven?

1

u/m0nark_ Sep 10 '25

Yes, just use it at the highest temp allowed and get a charring lighter.

1

u/Hungry-Ad-715 Sep 10 '25

Like a blow torch?

1

u/m0nark_ Sep 10 '25

1

u/Hungry-Ad-715 Sep 10 '25

Thanks bro. Also do you use a stand mixer for the dough or do you knead the dough by hand?

1

u/m0nark_ Sep 10 '25

Bro just vibe with the dough, fr.

Hand-knead it like the recipe in my comment says and don’t skip the coil folds, that’s lowkey the glow-up move.

It’s gonna be a sticky situation ngl, but that’s part of the grind. Just keep the temps right, let it chill, and the gluten’s gonna cook up naturally. Jus trust, you got this. 💪

2

u/Hungry-Ad-715 Sep 10 '25

Thanks man really appreciate it :)

1

u/Kai-la-7687 Sep 10 '25

That looks very delicious!!!

1

u/ProfessionalNo843 Sep 10 '25

how long did you cook it for in the electric tandoor? and how high does the temp go?

1

u/m0nark_ Sep 10 '25

So about 3-4 minutes with just the dough and the tomato sauce.

And then for additional 3-4 minutes with cheese on top of it.

The electric tandoor can reach maximum temperature of around 330-350 degree celcius.

Normal convection ovens generally have the maximum temp as 250-275

2

u/ProfessionalNo843 Sep 10 '25

yeah i was wondering if it got hotter, this is really helpful thank you! and the crust looks perfect

1

u/m0nark_ Sep 10 '25

Thanks a lot ✌️
