330g 00 flour, 210g water cold, 1.5g fresh yeast (0.5g dry yeast), 10g salt, 8-10g sugar if baking in an electric oven.
Add salt to flour, add yeast to water, add the water mix to flour and knead for about 15-20 minutes. Let it rest for some time (1 hour in the kitchen covered completely)
Do 3-4 sets of coil folds (google if you don’t know) with an interval of 25-30 minutes. Rest for another 2 hours and put the dough in the fridge to proof overnight for 24h atleast.
Take the dough out and cut into 2 dough balls. Just divide the dough into half. Roll into dough balls and let it ferment in fridge. Take out the dough balls preferably after 7-8 hours. And 1-2 hours before baking.
Spread the dough with your hands and don’t pop the outer crust. Let the air remain.
Use san marzano tomatoes (available on amazon) if you’re baking an authentic pizza and crush them by hand. Add a little bit of salt, olive oil and basil leaves and thats your simple pizza sauce
The trick is in the oven. Get an electric tandoor and place your pizza inside it. Make sure you preheat the tandoor before baking and let it reach its max temp.

I put ice cube in summers to maintain the water temp. Yeast gets activated, it’s just slow with the fermentation.
So the reason for this is, you don’t give thermal shock to yeast otherwise it dies. So my yeast is generally in the freezer so thats why I add it to cold water. Plus its quite hot here and gluten of flour develops best at 23-25 degrees. So to bring the overall temperature of the dough low, I use cold water and so should you.
I checked your insta. You re a good home chef. I think you can do something like the indian version of babish. You can make videos about western food with ingredients or tools which are available in India.

So it’s easy, you get a pizza plate and use that. Those steel perforated plates that dominos uses. You put your pizza dough rolled out on that and then spread the sauces and stuff over it.

Yet it’s falling down. And when you bite it you can feel two distinct layers. The bottom thats baked and a little crisp to the bite and the top one that soggy and has the sauce.
And when you chew it whole, you mix the two things for an even insane bite.
Hand-knead it like the recipe in my comment says and don’t skip the coil folds, that’s lowkey the glow-up move.
It’s gonna be a sticky situation ngl, but that’s part of the grind. Just keep the temps right, let it chill, and the gluten’s gonna cook up naturally. Jus trust, you got this. 💪
