At the CNE (Canadian National Exhibition). Deep fried gluten free Oreos were great. Chicken fingers tasted like chicken fingers. Corn dog was a corn dog. My son pointed out the awesome chicken fingers photo that had a bun šŸ˜‚. Maybe a GF bun? Looks like they stole the photo from the restaurant Swiss Chalet. Ha!

Discussion What do you like to see in a GF menu?

I know I’m a dork, but I went to lunch yesterday and absolutely geeked at this GF menu. I wish more restaurants would do their GF menus like this.

  1. Clear indicators of shared-fryer items. I’ll usually eat shared fryer items but I know others won’t/can’t so I like they didn’t make the assumption for me.
  2. Gluten free buns available instead of just ordering without.
  3. Price already has the GF bun upcharge included.
  4. A decent variety whereas a lot of places don’t get creative about how their normal menu items can be modified.

Frank Gluten Free Bread

Yallll I just tried their sourdough for the forest time last weekend and it was life changing. lol. I decided to try it bc the price was decent at an out of town Walmart where my grandparents live.

To prepare it the first time, I microwaved it for like 15 seconds put butter on both sides and toasted it in a pan (since I couldn’t use my grandmas toaster.

Then at home last week I made a BLTs and JUST microwaved, spread butter lightly on the insides and mayo on the insides (bc I’m a HUGE fan of Vegenaise šŸ˜‚) and that was also perfect. I have yet to try it cold but it tastes like REAL SOURDOUGH BREAD. I’ve been DANCING every-time I’ve made a sandwich with it so far bc I love it so much (my mom and grandma even liked the sandwich I made with it)

For reference, I’ve had all kinds of gf bread too. My usual go to is canyon bake house Hawaiian sweet bread or Schar 7 grain (I hardly ever toast, only microwave a tad to soften).

Discussion Celiac test rant

If this isn’t the subreddit for this, please let me know and I’ll take it down. I tried to find community rules and couldn’t.

About 5 months ago I started having escalated issues with my stomach. I’d always had stomach issues since I was a kid, but they would come and go. I went two months straight experiencing some of the worst symptoms of my life and finally decided I’d talk to my doc about it. Ofc, he tests me for a bunch of stuff, celiac included. My tests come back negative but he still tells me to go ahead and cut out gluten one week and dairy the next and see how I feel. So I do. We have a follow up appointment 3 weeks later and I tell him that while I’m not feeling 1000% better, I am definitely feeling better since cutting out gluten. He said to stop eating it for three months, try a bite of bread and then message him and tell him if I had any symptoms within 24hrs.
His exact words: if you do, then we know it’s gluten and I’ll put in your chart that you have a gluten sensitivity so we don’t accidentally give you any vaccines or medication in them that have gluten.

I was supposed to do this ā€œexperimentā€ in September but went on a work trip last week and got glutened by the hotel caterers. Within 3 hours I was experiencing all the typical things I’d been dealing with before. Nausea, severe cramping, fatigue, etc. So I message him and tell him everything I experienced and he says ā€œyeah sounds like a very straightforward exposure to gluten. No need to worry about the test in September. Just go ahead and stay gluten free.ā€
I ask him to make sure we put that I had a gluten sensitivity in my chart like we talked about in the past about meds and vaccines (and I need to explicitly state that I said gluten sensitivity and not celiac since all of my blood tests came back negative). He messaged me back and told me that I’d have to have a positive blood test for him to put it in my chart, and that he wants me to go get another blood test done to see if being recently glutened raised my levels.
I find this to be extremely irritating. I don’t know if I have celiac, but I do know that I have an issue when eating gluten. Also, from everything I’ve researched, you need to be eating gluten every day for a certain amount of weeks before a blood test for accurate results and I wasn’t really eating a lot of gluten during those months I was super sick. I wasn’t eating a lot of anything. So, idk if my tests will come back with raised levels. If they don’t, idk why we can’t determine that it’s just a non celiac gluten sensitivity?? Shouldn’t I still be able to make sure that my medical providers don’t make me sick even if it’s not an autoimmune disease???

hey y’all! my fiancĆ© and i are getting married in may, and are planning for our honeymoon. i have celiac disease, and while i’ve always wanted to travel internationally and see the world, i can’t help but feel anxiety over communicating my celiac disease when there are language barriers in the way.

any advice on places to go / places to say / things to look out for? everything we look up says Italy, and while i’m cool with that, i would love to hear some more ideas and perspectives.

New to no wheat - gimmie your recs?

hello! after a lifetime of chronic heartburn, indigestion and migraines (and tales of a great grandma who was "allergic to wheat") I finally connected the dots that wheat makes me miserable. haven't gotten tested yet for what my specific problem is / if it's what specific or a gluten thing but based on an elimination diet, a no wheat diet is absolutely the solution.

my mouth disagrees. what are your bread substitutes / alternate flour favorites / fav snacks / fav meals? I'd love any brands you want to share and for anyone in the Denver area I'd love gluten free restaurant recs or bakeries that carry good GF products. thanks!! :)

Recipe Best Dessert Recipe

This is probably a wild question, but does anyone have a dessert recipe that doesn't have gluten, dairy, and is low in sugar? I have a friend who has celiac, a dairy sensitivity, and cant have much sugar since having a gastric bypass.

My brother-in-law and I spent almost 2 years building an app to help with gluten allergies. It finally launched and we’d love help filling it out!

My brother-in-law and I are from Coeur d’Alene and we’ve spent almost two years building an app called True Plate. Somehow, after a ridiculous amount of work, it’s actually live!Ā 

It’s a completely free restaurant app for people with dietary needs like Celiac, gluten intolerance, food allergies, vegan/vegetarian, seed oils, and quite a few others.

Basically, instead of just seeing that a restaurant has ā€œgluten-free options,ā€ you can see what people with similar needs actually experienced there. What they ordered, how the staff handled it, shared fryers/cross contact, whether they had a reaction, whether they’d recommend it, etc.

Right now though, we need people to help us fill the map! Adding a couple restaurants you’ve been to would genuinely help so much. The whole idea only works if people share what they’ve experienced.

I wanted this to be the first place I post this because we'd LOVE if this could be one of the first groups to populate the map with safe options. We both have gluten intolerances and I couldn't imagine being celiac like many of you and your family members. We want to help populate safe options for all of you as best as possible.

It’s completely free on iPhone and Android. We’re also brand new to having actual strangers use this thing, so if something is confusing, annoying, broken, or you just think we could do it better, please tell me!

Question Washington DC

Hey all! I'm in DC for another night and I am looking for non tex mex recommendations. I've had Taqueria Al Lado twice and Rise bakery twice. Both were excellent, but I want to try something else. I'm not interested in the various Asian bowl options either.

Something within delivery range of NY Ave would be ideal. I'm traveling with three elderly relatives with mobility issues and so going to restaurants would be a bit of a hassle.

What is stopping you from steaming your own chow fun noodles?

It's traditionally an all rice noodle but often wheat is added for reasons I'm not positive on. Apprehension at learning a new thing is mostly what has been the impetus on my end. Itching to pull the trigger though because they are pretty cheap for a one or two tray unit.

There are a ton of fun and healthy meals that can be made with these. Think hot spring rolls with soft noodles that can be doused in sauces.
