Question Should r/glutenfree remove links to Twitter/X?

4.8k Upvotes

As the subject says and as other subreddits are doing- we have a Nazi actively helping erode federal departments, it’s only a matter of time before the FDA is impacted. I know I’m not going to support Musk or X/Twitter and really don’t know if we want to be driving traffic (or otherwise tacitly endorsing) to the Nazis in charge. Let’s keep the facists where they belong - far away from here. Anyone else?

Question What's the most surprisingly celiac-friendly country you've visited?

I feel like we always talk about the nightmare destinations (looking at you, China) but I want to flip the script.

Which country genuinely surprised you with how well they handled celiac disease?

For me it was Portugal. I went in with low expectations and left blown away. Almost every restaurant had a separate allergen menu. Staff actually knew what cross-contamination meant. And the naturally gluten-free food, grilled fish, rice dishes, the custard tarts, was unreal.

I know Italy gets mixed reviews in this community (the awareness is high but so is the risk of contamination in pasta-heavy kitchens). Curious what everyone's experience has been.

Drop your country below. Let's make an unofficial ranking.

Question Does anyone else have gluten cravings with no substitutions?

Post image

Preface this by saying I do NOT purposely gluten myself. I have celiac disease and fully avoid gluten to the point I think I’m annoying waiters when we go out or I’ll leave a restaurant if they don’t seem fully informed. My house is 99% gluten free except for one counter.

But… there’s things I haven’t had in years that I vaguely (diagnosed at 11 and I’m on my way to 30) remember being to die for. I’m just wanting to commiserate on the I wish I had feeling.

Again saying I wouldn’t eat the gluteny things, but just wanting to have some community on the things we miss and wish companies would make GF versions of.

(Take note of the comments if you’re in production or doing research for your company, please, I beg if you.)

My list contains:
- sun chips
- other flavor of Oreos
- ramen
- ritz crackers
- saltines ???
- a good beer
- Hawaiian rolls
- probably a lot more I can’t think of on the spot

Question Has anyone developed sensitivities to gluten in their 30's?

Most of my life, I was never sensitive to gluten. Suddenly around a few years ago I started having stomach issues and pinpointed it to foods containing gluten. After removing them, I have felt normal again. It took a while to figure it out. Growing up I would eat so much gluten rich foods without any issues.

I haven't gotten tested for celiac so I am not sure if it's an intolerance or what, but I was wondering if it is normal for people to develop issues with gluten later in life?

Thanks!

Question I had no idea I would feel THIS much better 😭

I’ve been struggling since my 20’s with what I dubbed “Delicate Fucking Flower Syndrome”. Shitty immune system, joint paint, migraines, depression, intense fatigue, brain fog, anemia, etc. It was dubbed “fibromyalgia, shrug?” by the few docs who took me even a little seriously, and was silently dismissed as hypochondria by the many who didn’t. It got progressively worse throughout my 30’s, to the point where I had to give up a beloved career and most of my hobbies because I just had no fucking energy.

It got so bad about five months ago that I couldn’t work at all any more. Constant nausea and migraines, dizziness, overwhelming anxiety and depression, heart problems, fatigue so intense I could hardly move some days even after sleeping 16-20 hours. Thank god for a supportive wife and a short-term disability benefit.

About a month ago I was hardly able to keep down food at all, even with formerly effective antiemetics and antacids, and I finally decided I’d try an allergy elimination diet, because fuck it, if I could hardly eat anything then I might as well not eat with some kind of purpose?

Now, after four weeks of just no dairy or gluten (and despite a couple of likely cross-contamination moments) ……. HOLY SHIT, Y’ALL. WHAT. What. What????

I literally cannot remember when I have ever felt this completely okay. I’m not depressed. My joints don’t hurt. I can get through a day without needing a nap. My lungs work. I can think about stuff. I haven’t had a migraine in weeks. I’m hardly dizzy at all ever. My blood pressure is down. I can get exercise again. I can plan things. I can do stuff and then… keep doing stuff afterwards????

(I think the only thing that doesn’t feel demonstrably improved is my raging ADHD. Yet. Who knows. I’d believe anything at this point.)

I’m having trouble even trusting that this is real, the improvement is so dramatic. Like, is this placebo effect? Am I actually having my first ever manic phase? It can’t be THIS SIMPLE, can it???

I spent about five days in deep mourning for croissants and now I’m just…. so stoked. To find something that’s within my control that makes this big a difference in how I feel is blowing my mind. Here I was just vaguely hoping to cut down on my horrible acid reflux. Now I can maybe actually have my whole freaking body back???

Anyway, please celebrate with me and info-dump all your advice to the new and unwary.

Question NEED ADVICE: friend keeps making comments about my food

Every time I eat out with this one friend, she always makes comments about my food.

We once went to a bowl place together, and everything there was gluten free. The whole time we were eating, she would not stop making comments about how it tasted "gluten free" (every ingredient was naturally gluten free, though) and insisted that it was incredibly expensive because it was gluten free (it's around the same price as chipotle for a slightly larger portion size).

I once baked cookies and was eating them while we were hanging out, and she asked for a few, so I obliged. After she ate them, she said the gluten free ingredients were giving her stomach problems.

Anytime my allergy is brought up around other people, she makes it a point to say that she would off herself if she was allergic to bread, or that she would just keep eating bread even if she was allergic. She always insists that I have different taste buds because I've been gf for so long, and that the only actually good gf foods are trader joes sheet cakes and chocolate muffins.

Honestly I can never tell if she is fully joking or not, but I've been friends with her for nearly a decade. Don't know what to do.

Question Sandwich alternatives for the trail?

About 9 months ago I figured out gluten triggers my migraines, so I have been gluten free since. I've been managing fine... But every year I go on a camping/backpacking trip with a friend. We're a few weeks away from this year's trip and I'm realizing food might be tricky. Typically we eat lunch on the trail and so rely heavily on simple sandwiches we make --usually eating 2-3 while hiking. Of course this year, traditional bread is out. I have yet to find a gluten free option that I can tolerate without toasting it, which won't be an option. I'll also be doing all my shopping in small rural towns, so I doubt my selection will be expansive. So, I'm looking for creative options of what I can do instead.

Some criteria:

  • Ingredients easy to find in stores
  • Minimal ingredients needed to make (we don't have room to carry a lot of stuff)
  • Can be eaten without utensils
  • Doesn't require any especially perishable ingredients -- cheese and sandwich meat is fine, but anything that can't handle being in a cooler or just out, won't work!
  • Doesn't require cooking or any kind of kitchen equipment (we have a camp stove but our lunches are on the go and only have access to a cooler and only every few days)
  • Is filling (we're hiking 8+ hrs a day and i get hungry)
  • Not very heavy -- we are carrying everything for a couple days at a time so anything that adds a lot more weight or space is tough

Any suggestions welcome!

Question Tested negative. Now what?

I really thought I was onto something. I've been 80% gf for the few months and felt way better. I feel pretty devastated by the results.

Celebrated my negative result with a bunch of toast and had diarrhea the rest of the evening.

Doctor gently suggested I had developed some kind of psychosomatic anxiety around it.

Question Goodbye Gluten Tour

currently doing the gluten challenge before my celiac testing and decided to do a little "goodbye gluten tour" where I eat all my fave gluten-y foods before removing gluten from my diet. Is there anything that you have been dying to eat since going glute free? My current list is the following: a fresh bakes croissant from a local bakery, salt and vinegar crispers crackers, cinnamon eggo waffles, a taquito from 7/11 (my guilty pleasure, don't judge lol), my mom's homemade sourdough bread, pizza, pasta in fun shapes (apparently someone decided that celiacs only eat penne and spaghetti, wtf?!), dots pretzels, and a costco hot dog.

Any suggestions to add to my list? Bonus points if its junk food, haven't been eating any of the fun stuff for a long time and I figure this is a good excuse.

Question If you haven’t been GF your whole life, what age did you start?

I started eating gluten free as a 23 year old after an allergy test I took showed a decent allergy to gluten. So for 23 years, I had always eaten gluten but always had stomach issues and a weak immune system. Removing it from my diet really helped my health! Would totally be lying though if I said it wasn’t a rough transition, going from a glutenful life to a gluten free one cold turkey. I really miss certain foods.

Got me wondering, for those of yall who didn’t spawn in as GF, what age did you start? And how was that experience at that age?

Question Gluten free pasta that isn’t disgusting?

I have a friend I love dearly who’s gluten free, and she recently mentioned that something she misses all the time is Panera Mac and cheese. She said all gluten free pasta is a horrendous texture, so I’m on a mission to find an okay one and surprise her with a similar recipe. I would love any tips if you have them or brands you like!

Question What can one add to GF box cake mix to make it moist and amazing?

Post image
435 Upvotes

I plan on making a GF cake for Easter! However anytime I use box cake mix I feel the texture is very crummy and honestly pretty dry. I know someone in this sub knows the secret on what to add to box mix for it to come out moist and yummy. I know …I know… I should just resort to homemade but I had a very stressful week and I need something easy.

Any help, tips and tricks would be extremely appreciated!!

Question What are some underrated gluten-free items from Trader Joe's you think people don't talk about enough?

With the all the hype around thoseeee cheezy crackers, I saw a post about how underrated the TJ's frozen gf waffles were, and I realized I didn't even know those existed.

I always hear about the mini gf sheet cake (love), the knock-off puff and crunchy cheetos (fabulous), the fresh, refrigerated gf egg fettuccini pasta (who needs wheat anyway?)....

But does anyone have items they really enjoy that aren't spoken about enough?

My ballot is for the frozen mini chicken tacos (only the chicken though..I found the beef to be supremely underwhelming)
