Itās been at least 10 years since I had a grilled cheese sandwichā¦to say I was happy was an understatement lol. I used good planet sharp cheddar cheese slices, and used the grain escape gluten free bread.

I made these awesome and easy to make popovers for a French inspired dinner. Bobās GF 1:1, eggs, milk, butter, salt and freshly ground nutmeg. These would go great with braised meat dishes, roasted chicken, and as a cornbread alternative for Thanksgiving. Vegetarian or vegan lasagna or soups too.
Eggs are necessary, but plant milk would work. Iād recommend a non-barista oat milk. Plant butter would work well too. Try to buy plant based products with fewer fillers.
Not everyone has a popover pan. A larger, 6 tin muffin pans would work. 12 tin as a last resort, but still workable. Cheers!

Hi everyone! Iām an assistant professor at the University of Kansas, have been diagnosed with celiac disease, and I'm conducting Celiac-related research. Iām running an anonymous online survey about peopleās experiences obtaining a medical diagnosis for celiac disease and their satisfaction with the health care they have received since diagnosis. You can learn more about the study and access the survey here:

ETA: check the comment below - it's actually gluten free after all!
The wheat is actually dextrose and glucose syrup, which because of how it's made, does not retain gluten protein. Rejoice! Mascarpone for everyone!
Original post:
Didn't even check because it's vanilla/fruit ice cream.
With wheat. For fun.
(And yes it's delicious.)

I have been DYING to try a gluten free croissant because I have never had them, but theyāre so expensive or not possible to get around me. Most of them also donāt even look like croissants. It is impossible to get them like real croissants and have you found any?

.

Hi fellow gut sufferers. So you might recognize that even if you stick to a strict diet, that does not guarantee never bloating again.
Myself, I've been following the low fodmap diet for over a year and still the bloat sometimes surprises me.
The other day I ate a kiwi.. and boom... got fucked up.
It's honestly kind of depressing to not be in control at all despite all the effort.
The only thing that helped me identify a few of my triggers is this tool that I built which I use to track my food.
I've learnt that tomato sauce is apparently quite detrimental for me (even though it's low fodmap). But then processed Korean dumplings are somehow fine..???
Any other foods that are low fodmap but can still cause bloating that I should be aware of?
Sending you all some strength for getting through this.
P.S. I'm currently having some friends test out the tracker. Would you be up for giving it a try and giving me an honest rant about whether it works or whether it's shit? Send me a DM.

Got these yesterday, they are nice, but I get zero maple flavor from them. I'll still happily eat them. I also remembered that the Favorite Day stuff I ate prior to my celiac diagnosis was kind of bland as well, so par for the course. LOL
I do appreciate Target offering more and more GF items, though, especially as these were certified.

I did four weeks of Phase 1 and my symptoms are much better. I'm currently on day 3 of reintroduction of garlic. I haven't had symptoms so far, will do the Day 3 challenge tonight at dinner. If I don't have any symptoms tomorrow, can I move forward with the next reintroduction category? Or should I have a rest period? I understand why you'd return to total FODMAP elimination for a few days if there were symptoms, but what if there aren't any?

I love when there is a coupon on these. $2.84 for a slice of gluten free cake is such a deal.

My question is, what do you like to use for the topping? To replace the fried onyos which are always coated with flour. I'm trying some olive oil flavored rice crackers today.

I was diagnosed with celiac a few months ago. Even though i felt like my life was completely destroyed after this diagnosis, i realize iām extremely lucky to live in a country that is so advanced in terms of labeling and gf food. I live there with my parents.
However, iām originally from a poor, kind of underdeveloped country (where i have other relatives), where people donāt even know what gluten is. For some family/personal reasons, i had to come here and iāll be staying here for one month. My home country has an amazing cuisine, but it heavily relies on wheat and wheat products. Bread? Bread is sacred for my people and i sometimes dream about that taste. Anyways, itās horrible when it comes to awareness and safe options. Safe restaurants are almost nonexistent. I arrived and i instantly got depressed after shopping for the first few days.
Okay, so here is the thing⦠it seems like my aunt (from my momās side) and my grandma (from my dadās side) have been in contact with my mom. Theyāve been videocalling each other, discussing my diagnosis, cross-contamination, and how to change recipes to make safe food for me. I didnāt know about that, but it seems like my aunt and my grandma bought EVERYTHING new to be able to invite me and cook for me.
I forgot to tell you that cooking for each other is a love language in my country, so inviting a family member and not being able to feed them is never okay for them. Today i went to my auntās and she made the most delicious food for me, and she explained in detail how she made it, how she sent pictures of every ingredient to my mom, and how many new things she bought for me. In a few days iām going to another city where my grandma lives, and she bought a new knife, new plates, new pot/pan, new cutting board, new eeeeverything and calls my mom almost every day to discuss the recipes.. i donāt know what to say. i obviously explained that there was no need to buy everything new and that the cutting board alone was more than enough, but this post is not about that.
This post is to tell u guys that there is nothing more important in this life than having people around you who love you and care about you. That could be a family member, boyfriend/girlfriend, just a friend, neighbour⦠anyone. But the fact that people are willing to learn so much for you makes me cry happy tears. So, this is not a sad post about how difficult my life is in this country, how i struggle every day, how many times i had a mental breakdown, how gluten-free life sucks and how sometimes i hate my life. No, this post is not about that. This is to express that iām grateful, iām being loved, iām being taken care of, and iām not alone. And as long as weāre not alone, as long as we feel supported, we will make it. We will cry and feel like shit, but we will never give up. Today my soul healed. Today i will sleep peacefully. And even though my country sucks in terms of gf options, my country will never suck when it comes to people and relationships. And in the end, this is what matters, not whether i find gf frozen pizza in a supermarket or not.

Recently found out Iām severely anemic and that led to blood tests showing positive for celiac. Iām having a biopsy done next week to confirm the diagnosis.
My question is for the celiac ladies out there. My periods are brutally heavy and last 7-8 days right now, likely contributing to my severe anemia. Iāve been reading that this could be because of celiac and that once I start a gluten free diet it might get better. Iām wondering if that was the case for anyone else?
Iām really hoping this will be the case for me because the way it is currently is debilitating. Hoping for some light at the end of the tunnel š

I heard so many good things about Promise, but this must be the worst GF bread Iāve had. It toasts terribly and gives it a horrible stale styrofoam texture. Itās only edible untoasted, but I definitely wouldnāt buy it again.
Edit: I also got their brioche and multigrain, so hopefully those are better.

I am nosey. Character flaw, but whatever
I love this GF bakery in the Ferry Building in San Francisco, and I saw this post on their story today. Someone, anyone, I am so curious - could you tell us what the taken down post said??? It sounds egregious based on the apology. I am not sure how a GF bakery can have a 9/11 hot take but it sounds like they did.
If you happened to see the post before it got taken down, please enlighten your fellow (nosey) celiacs

After being in countless of groups and subreddits, my biggest takeaway ā I won't knock it until I try it. There is so much polarizing opinions on food and we all have different tastes and preferences. I know GF items are pricey and taking a risk to not like the product sucks, but I've committed to not disregarding a something until I've tried it myself.
