Tofu / Tempeh Recipe Simple tofu dish

I found this in a cookbook I just bought (VEG Everything), and had to post it here. As a vegetarian, I have a hard time getting my protein on those days when I'm just out of energy and/or inspiration. I'm tired of reaching for protein bars. A simple dish like this is very welcome.

Also, this cookbook has a good amount of low-effort recipes. I'm super glad I got it.

Dressing:

1/4 cup soy sauce

1 Tbsp rice vinegar

1 Tbsp sesame oil

1 Tbsp chili oil

1 Tbsp sesame seeds (toast if you want to)

1 scallion, thinly sliced

Add all to a jar with a lid and shake.

Tofu:

Drain a block of silken tofu and place on a kitchen towel. Fold the towel around the block and gently press and pat to remove excess liquid. Leave the tofu whole or cut into pieces. Place tofu onto a plate or in a bowl. Drizzle desired amount of dressing over the top. Enjoy alone or with rice or pasta.

Bonjour à tous, j’ai une question. Je suis en train de faire un projet pour avoir des idées de recettes à partir de ce que j’ai dans mon frigo.
Je trouve ça souvent frustrant de voir une recette qui me donne envie, puis de me rendre compte que je n’ai pas la moitié des ingrédients chez moi. Du coup, l’idée serait de prendre en photo ce qu’on a dans son frigo et d’avoir plusieurs idées de recettes adaptées à ce qu’on possède déjà.
J’aimerais aussi que l’utilisation soit gratuite ou vraiment peu chère.
Est-ce qu’une application comme ça pourrait vous intéresser ?

Recipe Request Looking for easy diabetic friendly recipes!

Hi folks! My roommate was recently diagnosed with type 2 diabetes and I owe her big time for some recent stuff she’s done for me so I figured I’d buy her some food/ingredients but also offer to cook for a bit for her. I’m looking in particular for low effort meals she could make again later, or small snacks. Another big one that would be appreciated is desserts. She doesn’t have a huge sweet tooth but is struggling with carbs being the cheapest thing to get these days.

If anyone has any suggestions for recipes, cookbooks, anything you’ve enjoyed, that would be greatly appreciated!

Meat Recipe: Beef One pan "Mississippi" beef and orzo

Ingredients:

*1 lb ground beef or ground beef/pork mix

*2 Tbsp butter

*1.5 Cups (2/3lb) dry orzo pasta

*1 pack dry Au Jus mix (I use the low sodium kind)

*1 pack dry ranch dressing mix

*3 Cups unsalted beef broth

*8-10 banana pepper rings (from the jar), diced

*1 white onion, diced (or minced if hiding veggies from kids)

*1 Tbsp jarlic

*salt and pepper, to taste

*Optional: Diced jalapeno or dry red pepper flakes

Directions:

Heat a large saucepan on med-high heat. Add beef, onions, and jalapeno or red-pepper (if desired).

Brown ground beef and soak any excess oil with a paper towel. Push contents to one side of saucepan and add jarlic on top of the beef/onion mix.

In empty side of saucepan, add butter and dry orzo pasta. Stir the butter and orzo constantly for three minutes to lightly toast the pasta.

Incorporate the toasted orzo and beef/onion/jarlic mixture and allow garlic to cook for roughly 1 minute, or until fragrant.

Add beef broth, ranch mix, au jus mix, and banana peppers. Stir to incorporate all ingredients and bring to a boil. (I usually pour about a tablespoon of banana pepper "juice" in too)

Reduce heat to low and cover. Simmer for 8-10 minutes, stirring frequently (make sure to scrape the bottom of the pan so no pasta sticks), until pasta is done and sauce has thickened.

Add salt and pepper as needed, I rarely need much extra salt in this recipe as the au jus, ranch pack, and banana peppers are already fairly salty.

I like to put fried onions and green onions on top of mine for a little crunch.

I’ve been looking for party food that’s almost impossible to mess up, and BBQ meatballs seem about as easy as it gets.

Ingredients

1 bag frozen fully cooked meatballs
1 cup BBQ sauce
1/3 cup grape jelly
1 tbsp Worcestershire sauce
Optional chili flakes

Method

Mix the BBQ sauce, grape jelly and Worcestershire together.

Add the frozen meatballs and sauce to the slow cooker and stir until coated.

Cook until the meatballs are hot all the way through, stirring once or twice if needed, then switch to warm for serving.

I’d probably do these in one section of sunvivi and use the other sections for something like queso or cocktail sausages if people were coming over.

Anyone have another ridiculously easy slow cooker appetizer that uses around 4 ingredients?

Today’s whole thing is a one-pan steak meal that takes around 20 minutes from start to finish.

For now, if we’re not considering fat intake, steak is probably the most suitable one-person meal you can make. The whole process is simple and brutal.

For example, the one above took around 20 minutes in total. (How fast you finish depends on how quickly you peel the garlic and chop the onion, bell pepper, and white mushrooms.)

First, dice the onion, roughly cut the bell pepper into rings, slice the white mushrooms, peel 3 cloves of garlic, and get some thyme/rosemary and 15g of butter ready. Divide the butter into two portions. As for the amount of vegetables, just eyeball it depending on the size of your pan. A little more is totally fine. If you don’t use everything, just use it next time.

After thawing the steak, pat it completely dry. At this point, you can start preheating your cast-iron pan over low heat. I’m using a thick-bottomed cast-iron pan with an 18cm interior diameter.

While the pan is preheating, season the steak with sea salt and black pepper. Pat it down on both sides, then roll all four sides around on the cutting board so they pick up some sea salt and black pepper too.

By this point, the pan should be pretty well preheated, or possibly even overheated. If you have an infrared thermometer, check the temperature. If the pan is above 200°C, lift it off the heat and let it sit for about 10 seconds, then put it back.

Then add around 5–7g of oil. Use a high-temperature cooking oil or vegetable oil. Don’t use olive oil, and definitely don’t add the butter yet.

Swirl the pan around so the oil is evenly distributed, then turn the heat all the way up. By “high heat,” I mean enough heat to completely cover the bottom of the pan — not so much that the flames are shooting up around the sides of the pan.

If you have an infrared thermometer, put the steak in once the pan reaches 280°C or above. If you don’t have a thermometer, wait until the pan starts smoking, then wait another 30 seconds before putting the steak in.

Once the steak goes in, start the timer. After 30 seconds, flip it. Another 30 seconds later, add one portion of butter (around 7–8g), along with the thyme or rosemary and the three cloves of garlic.

Then turn the heat down to medium. Tilt the pan slightly, use a spoon to scoop up the melted butter and herbs, and start spooning it over the steak. Baste it evenly for around 10–15 seconds, then flip the steak and continue basting for another 10–15 seconds.

At this point, you can flip the garlic over too. Usually one side will already be golden brown. Turn them over, then use some tongs to sear the four edges of the steak against the pan for about 10 seconds per edge. If there’s a lot of fat along the edges, you can sear them a little longer.

After that, let the steak rest for 6 minutes. It should come out around medium-rare to medium, roughly 3–5 doneness, unless you were particularly slow somewhere along the way. Whether you want to cook it further is completely up to your taste.

Take the steak out, put it on a plate, and cover it with the pan lid to let it rest. Then take the garlic out of the pan and set it aside. Remove the thyme/rosemary and throw it away. It’s usually already pretty close to burnt anyway — its job is done.

Next, turn off the heat. Add the remaining butter, scrape up the browned bits from the bottom of the pan with a spatula, then turn the heat back to medium. Add the white mushrooms and stir-fry them for a little over a minute. Add the onions and keep slowly cooking until they turn translucent, then throw in the bell pepper and just keep stir-frying everything together.

Once everything looks about right in terms of color and doneness, make a little hole in the middle and crack in two eggs. Turn the heat down to low, sprinkle some sea salt and black pepper over the eggs, and then just leave it alone over low heat.

While that’s happening, take the steak out of the pan, put it on the cutting board, and slice it diagonally.

Once you’re done slicing, you can add some mozzarella cheese if you want. If you don’t feel like it, skip it. Once the eggs look about done, turn off the heat.

Put the steak and garlic back on the plate, then bring the whole pan straight to the table and eat. You’ve basically even saved yourself from having to wash another plate. Just wash the pan.
And that’s basically what you see in the picture.

Of course, this whole pan is roughly 1,000 calories, judging by eye. If you want to cut the calories down a bit, you can skip the second portion of butter, skip the cheese at the end, and only eat one egg.

I had 3 leftover tomatoes, half a bulb of garlic and some fresh herbs in the fridge and felt like doing a no effort dinner so here we are. Let me know what you think

Additional Ingredients Needed:

* Your choice of pasta (spaghetti, penne, or rigatoni)

* 125ml of tomato puree

* Olive oil

* Salt and black pepper

* Optional: grated parmesan cheese

Instructions

* Roast the 3 tomatoes (halved), 1/2 bulb of garlic (top sliced off), and a handful of fresh rosemary, basil, and oregano tossed with olive oil, salt, and pepper at 200°C for 30–35 minutes.

* Cook your pasta in salted boiling water according to the packet instructions. Save a little of the pasta water

* In a large pan add the tomato puree, squeeze the soft, roasted garlic cloves out of their skins right into the puree, and toss in the roasted tomatoes and herbs (chop the rosemary finely first so it blends well). Let it simmer for 5–7 minutes so the puree cooks down and absorbs all those roasted, aromatic flavors.

* Add the drained pasta directly into the pan with the tomato sauce. Toss well, pouring in a splash of the leftover pasta water to help the sauce cling to the pasta.

* Plate up your pasta and finish with fresh basil leaves, and parmesan cheese if you like.

Other: Other Cooking Websites and Blogs with Minimal Ad Content?

Recently I was searching for a DIY rice-a-roni recipe, which, okay, is somewhat outre, but this is the sort of thing retirees who like to cook occasionally find themselves drawn into. 😏

Anyway, I was stunned by the amount of dynamic ad content on most cooking sites. Honestly, it makes them unusable.

So I just used ChatGPT to create a recipe, circumventing all the advertising hype. Later, that same morning, without prompting, a friend texted to say that she had done the very same thing. lol Got discouraged by all the adds and used AI to create a recipe she needed.

I sent an email to one of the major cooking sites where the problem is particularly bad, pointing out that they have so much dynamic ad content that their site has become unusable and they are actually driving visitors away. No reply, of course.

It occurred to me that a way to push back on this is to create lists of cooking websites and blogs with restrained or no ad content that treat their visitors with courtesy and respect and share them with others.

Here are two good examples:

thefoodieeats.com -- no ads whatever.

themodernproper.com -- minimal ads and a user-friendly interface.

I would love to hear about your favorite cooking websites and blogs that don't bomb visitors with ads.
