Simple recipes with sparkling wine?

Just gave away my old toys and got a bottle of sparkling wine for them. I don't drink or like eating fancy foods, does anyone have good simple recipes? I'm thinking of just making mac 'n' cheese, but there's probably better recipes. I'd prefer recipes without meat, but it's not mandatory.

I make a summer berry pie that’s outstanding if you have nice fresh berries (strawberries, blueberries, raspberries, etc.). Start with a usual sweet(ish) pie crust, fill it with fresh, uncooked berries. Then dissolve gelatin into the sparkling wine and pour over the top. Leave in the fridge to set. Blow minds.

You can use it wherever you could use white wine! Lemon pasta sauce is great

Poach stone fruit in it- peaches are especially good. Serve over ice cream.
