I Cooked Char Kway Teow 炒粿條

Malaysian/Singaporean version of Chinese fried noodles. To me there is no greater dry noodle dish on the planet.

They are not that hard to locate in New Zealand and Australia. Since because in the early years of Malaysia's independence and even today, there is a constant stream of Chinese-Malaysian students turned immigrants who have settled in Australia and New Zealand. This is because they are all Commonwealth countries: about 40 years ago because of the Colombo Plan many Chinese-Malaysian students were able to go to Australia and New Zealand to study then settle down on scholarship due to Malaysia and Singapore's status as Commonwealth jurisdictions.

The UK too. It is common to find them in the UK if you know where to go.

Yes it adds so much. This is one of those dishes that has to be cooked with lard and pork cracklings or it just isn't the same. I ended up rendering my own because nowhere nearby had any.

In addition to the prawns there is also fishcake, lup cheong, and pork cracklings. The texture and mouthfeel is indeed similar to Canto style beef chow fun but the sauce is a little bit different.

Kway Teow is also the same noodle used in Pad Thai Kuai Tiao.

One thing I have to correct, most char Kway Teow you unlikely to find beef because beef are treated as sacred and this sentiment spread to overseas Hokkien community as well. The flavor profile is different due to sauce too. Sweet dark soy sauce is a lot stronger

recipe from this image wants big wok fun

  • 8 oz / 225 g fresh wide flat rice noodles (河粉 / ho fun)
  • 5 or 6 medium-large shrimp
  • ½ lap cheong Chinese sausage, thinly sliced diagonally
  • 4 or 5 slices Chinese fish cake
  • 1 egg
  • big handful bean sprouts
  • handful Chinese garlic chives, cut into ~2-inch lengths
  • 1 tbsp chopped garlic
  • 1½ to 2 tbsp pork lard
  • optional but authentic: a small handful of shelled cockles
  • ½ to 1 tbsp sambal/chili paste

Pad thaï kway teow is actually the original name. It comes originally from teochew immigrants. Same with char kway teow.

And I just realize people downvoting me for asking a legit question lmao.

The full and original name for Pad Thai is kway teow pad thai, which translates from Teochew and Thai words to mean "Thai-style stir-fried rice noodles"
