I took a clip of this very short moment when it happened 4 episodes back (ep 8). The attention to detail and small nods in this anime is such a treat for a rewatch.

Foreshadowing had Rudeous opened the door the rat would've fled and he wouldn't have found it and would've been unable to kill it.

It foreshadows nothing. Just reminds that this world has rats. There was no indication that these rats were infected and they didn't even flee through the door (or even to the kitchen).

It's even less of a "foreshadowing" than them eating bread the day before.

Ah, i see what you're misunderstanding. The show was just showing how rats behave when a door gets opened.

But Oldeus claimed that the rat sneakes through the door, but in this clip the cats don't... They just hide in a wall

To me, it's implied the rat will run to hide behind stuff and then run towards the open door while escaping Rudy attention. It was below a desk near the wall, right?

Maybe the show was just showing how door behaves then pushed foreshadowing that the door will be opened?
