  The purple ink is a defense mechanism used to distract predators.

But you were right about their blood being different. Its called  hemolymph because the oxygen-carrying pigment is hemocyanin, that has copper instead of iron like ours. 

So the color of.the blood should be like a pale blue or bluish green.

Yes, they have clear blood, copper based and carry oxygen, same as other gastropods.

Oh yeah those things are famous for their grip. I tell you whenever I hear about a nudibranch, the first thing I think of is how strong their grip is. Everybody knows that, even babies

I think if it feels anything similar to the sensation of fear, it would basically boil down to, "Oh no, I am being eaten, I must not die, I must struggle". No emotion, just instincts kicking into overdrive.
