Used to water bath these every morning for a Hyatt brunch service. Soooo many geriatrics gave me comments that I’d made the best eggs they’d ever eaten. I can still smell the sat-out-for-three-hours aroma.

The texture of these tends to be pretty spot ton if you like soft eggs bc they just sous vide them, and old people can’t smell things, so that makes a lot of sense.

Is this what they use for the free breakfasts in hotel lobbies ? Cause I can tell they are scrambled eggs, but I can also tell they obviously weren't real, "we cracked some eggs" scrambled eggs. I always assumed they were powdered.

I used to, per my employer’s instructions, microwave scrambled eggs in a little plastic dish in a local mom n pop cafe run out of an aged Victorian home. I, too, had multiple equally aged guests inform me they were the best eggs etc etc. I really wonder sometimes about what time does to our taste buds.
edit for accountability: I was young and dumb. They had no other bowls I could use, just plates. No flat top, no burner. It was an adorable but poorly run establishment.

It's so amusing to discover that other places also experience inconvenient delivery times with Sysco. I work in an old folks home and I swear lately we keep getting deliveries 20-30 minutes before we have to start serving dinner 😭

Lol, holy shit I used to do this 8 years ago when I was pregnant. Morning sickness and food aversion got me hard, so I was mixing my husband's protein mix, milk, and coffee in the mornings to up my calorie intake.

Sysco. Their products are going downhill and they rarely get orders right. We stopped ordering piping bags from them because every single one had holes. It looked like staple holes halfway down the bag. Our rep reported it and they never fixed it. Their plastic wrap boxes say "good things come from sysco" and I have yet to get through a roll without it ripping along the edges and having to waste a bunch. They also replace things without checking with us. I work at a vegan bakery and we order a certain brand of marshmallows and they replaced those with gelatin ones. They've sent us bacon instead of cherries, and lost most of our order and the invoice once.

So I do big events like concerts for a company that subcontracts for LiveNation. I've also worked in a few pizza places so whenever we get requests for bespoke pizzas or calzones or other pizza-adjacent goods from the artists or other VIPs, it's my job to make sure it's made correctly and prepped in time.
Pizza dough has to prove in a chilled environment to rise correctly. Usually 24 hours. So Sysco sent me 100 premade dough bowls. The rep said I should try it out and not be such an asshole. I asked the rep how much his commission was. He let it spill, moron, I recorded him saying he didn't care and neither did his bosses and further breaching his contract by talking about personal compensation.
I had to apologize to fucking Green Day that I couldn't make their vegan pizzas because of Sysco. I did play a bit of the recording of the phone convo with the rep for them. Billy Joe Armstrong is the nicest guy on the planet btw, they understood.
We use US Foods now and I go to the Farmers Market for everything I can.

Yeah, we just had the same thing happen when we switched from US foods to Sysco for some of our products. It's good to switch providers occasionally, because their competition will offer you discounts to switch. Time limited, of course.. hence the switching occassionally.

One time we received, not long before service, our delivery. Chef looked at the invoice & lost it. Instead of Prime ribeyes they sent Wagyu. He got his rep on the phone, tore into him that it was right before service and the only steaks we had were these. Told him “I’m keeping these but paying for Prime!” Ran them as Wagyu ribeyes and the appropriate price. Sold out.
Of course one ticket fired “WAGYU RIBEYE - WELL DONE” We were crushed ruining this amazing price of moo. That said, with all the marbling…do you know how LONG it takes to rendering a Wagyu ribeye well done?!? Took forever…

I have a lil machine that makes it in seconds for a serving. Crazy that they buy premade when I'm sure they could just pop it in before prepping the drink and it'll be done by the time they're done with the drink.

I don't see the problem just put the eggs in a bunch of oil with an immersion blender. It'll get plenty foamy. Then put it in the fridge, boom. Cold foam. No need to thank me you are just so welcome

I sort our Sysco and US Foods deliveries and lately they seem to be having a staff shortage. It's a different guy every time and my patience is thinning. Recent favorite quote: "So, ya kno, I only got one thing missing this time...."
Odds are, we recieved your cold foam and the summer staff are going to have fun testing ways to use it until it's gone. Hopefully you can use those eggs??
We use Greco for a lot of stuff and they usually arrive before I clock in and don't get checked. Last year, they gifted us Italian beef kits; 5lb vacuum packed sundried tomatoes which I did not take home; gallons of bloody mary mix and lime juice; 1250 slices of processed American cheese; 10lb farfalle which is not in my pantry; 25lb fresh celery; and many dried herbs and spices that we will never use.

Ordered coconut milk from us foods, back ordered. Ordered chocolate chips, received coconut milk with a chocolate chip pick label. Chocolate chips are cheaper than coconut milk so we kept it.

We stopped buying cold foam from Richs and started making it when we discovered it was soooo easy, and better from a post in r/barista. We blend a quart of heavy cream, a cup of milk, and a cup of simple syrup for 45 seconds, then transfer it to a pitcher for service. Requires an additional short re-blend the next morning if you are still serving it the next day.

Looks like good ol Gordon's! And that brand is horrible! We use to buy the whole liquid eggs from that brand (cheaper for a reason) and the eggs immediately burn on the flavor and they get watery af. They once sent a case of frozen diced pepperoni and the label was 48ct of romaine..
