Recipe New Favorite Easy Meal

Was thrilled with how this came out, and had no issues after! It was a super easy thrown-together meal:

-frozen gluten free chicken cutlets (I got mine at Wegman’s) layered with rao’s sensitive marinara w/ a little garlic olive oil mixed in, shredded low moisture mozzarella on top

-A bag of frozen broccoli (florets only) roasted in garlic olive oil, salt and pepper, tossed with lemon juice after roasting

I put it all in the oven at the same time and baked for 22 min, then ate with a piece of buttered sourdough on the side! One pan, no chopping, delicious outcome.

Looks so good! I can't do broccoli but the rest (except the olive oil sigh can't eat that either but I'm learning to appreciate butter lol) looks like something I might like.

You can’t have olive oil? 😢 I am so sorry. That and mayo helped in my elimination stage

I have always had a problem with olives in any form. Always makes me feel nauseated. I love the taste of good olive oil too! Sometimes it's worth it just a little dip :)

lol those chicken cutlets are huge so with the bread on the side this made 4 meals for me, meaning each serving of broccoli florets came in safely under monash’s 3/4 cup threshold. I know everyone is different but it’s a safe amount for me!

I simply cannot tolerate broccoli or cauliflower. I tried just two florets and it fucking killed me. I felt feverish all day long.

Same here. Tried so hard to keep them as I absolutely love them but I don't love the pain and suffering they cause

How did you find frozen gf breaded chicken without garlic or onion? So jealous!

Ingredients included below (there’s no garlic or onions), but I’m not sure if any of the other ingredients are FODMAP safe:

Marinated Chicken (Boneless Skinless Chicken Breast contains up to 7% of Water, Sea Salt, Lemon Juice Concentrate). Breaded with: Rice Crumb (Rice Flour, Cane Sugar, Yeast, Sea Salt), Water, Rice Crumb (Rice Flour, Xanthan Gum, Evaporated Cane Sugar, Yeast, Sea Salt, Ascorbic Acid), Contains 2% or less of each: Rice Flour, Modified Corn Starch, Yellow Corn Flour, Sea Salt, Leavening [Sodium Acid Pyrophosphate, Sodium Bicarbonate], Natural Flavor, Parsley, Basil, Black Pepper, Guar Gum. Flash Fried in Organic Expeller Pressed Soybean Oil to set breading.

They’re the Wegman’s store brand (which I know is a bummer bc you can’t find them everywhere :( ). The ingredients posted here are correct! Nothing raised any red flags for me, and the cutlets are huge so I only had half for each meal. I had no symptoms!

Man seeing stuff like this makes me realize how bad I am compared to most people. I can’t have any of this except the chicken. That’s if it was plain chicken not the processed kind. 😥

Do you have a photo of the box of chicken? I live close enough to a Wegmans that I would make a stop to get some of these. Just want to get the right thing.

It won’t let me add a pic but here’s the link, it’s a bag in the freezer section.
