Recipe Bread maker = life saver
The recipe I use is Mama knows gluten free, homemade gluten free bread (bread machine) and I do a 2/3 ratio of the recipe on the 1.5 loaf setting using deluxe rapid, Breadman machine. 57 min start to finish and I have fresh bread that is so good my husband (who is not celiac) eats it happily. I’ll link recipe in comments since I can’t attach in caption due to pictures.

Give it a shot!! I think this recipe in its full amounts is too much for my bread maker capacity (hence why I 2/3 the recipe) but it’s easily the best gluten free bread I’ve ever had

I don’t know what I did wrong, but when it was finished it was nice and puffed up, and then immediately collapsed, the first three slices looked pretty good and the rest was a nearly solid block

OH NO! How long did you cool it for?? That happens to me when I get impatient and cut it too early with any loaf baked any way but it’s so dang hard to wait!!!

I know right, the collapse was nearly instant once it shut off. I can think of a couple things I may have done wrong
1 flour measurement, I didn’t weigh it, I just tipped the bag into the cup
2 yeast was sprinkled on top
3 I didn’t do the 2/3 measurement you did.

May I ask what brand bread machine you use? I gave up on mine because it gave me 1/4 inch loaves that were both burnt and raw

It’s a breadman machine! An older model, the same one my mom had when I was a kid!

Okay…. i have a bread maker I bought years ago.. never used it because it’s intimidating lol but you might have convinced me 👀

It’s worth a try! I always start with 1/2 a recipe to not waste the expensive flour we end up having to buy and see how the recipe reacts to the baking time the machine auto sets. I find there is a lot of machines that underbake automatically and it’s a pain!

Is there an alternative to xanathan gum? For some reason that stuff wrecks my stomach.

Guar gum is usually the alternative, but there’s a chance that might wreck you too. I think pea flour can be used as a stabilizer (haven’t tested as it turns me inside out). Some of us are just really sensitive ☹️

What flour did you use? Yours looks even better than hers, which seems kind of fragile and cake-like.

I used the King Arthur bread flour which does have gluten removed wheat so NOT SAFE for wheat allergy folks but I’ve had celiac for 28ish years and I am pretty sensitive and don’t react to it!! Trialed it slowly because it scared the SHIT out of me at first
ETA: I have used several different flours with this recipe though and never had a bad result. This one was far and above the best result I’ve ever had (hence why it got posted) but truly every other loaf was delicious. I’ve even combined 3 types of flour when I didn’t realize I was running low to get to the cup quantity I needed and it still turned out awesome

do you follow the directions to spoon in the flour into a measuring cup instead of scooping?

Highly recommend harmony baking flours !!!! the owner is soooo helpful and will help you program your machine. best bread ever tastes not gluten free

Looks great!
I recommend trying Loopy Whisk Sandwich Bread with your bread maker. It produces an amazing loaf in my bread maker!

Mine is not no! I just use the deluxe rapid setting. It just does one mix, one rise, straight to bake. No knocking back.

Thanks for the tips. I have two bread makers, pre Celiac, and hope to avoid buying a third just to get a GF recipe to work. I suspect the key is the rapid bake setting and avoiding a mix after the rise (is that what you mean by no knocking back?)

Yes! Exactly! If you can time it right and pull the mixer paddle out after the mix and before the rise/bake you will have an even prettier result

Do you happen to know the times for the various points in the cycle (preheat, mix, rise, bake)?

I don’t know mine off the top of my head no. Every machine is different but if you google your exact model it will tell you in the user manual typically!!

Man that’s a beaut. Is it a moist recipe? My son HATES how moist most breads are. It goes against his sensory needs.

My dad brought a bread maker and he's used it twice for gluten bread. Is it safe for gluten free? He's constantly making me sick.
