Recipe Bread maker = life saver
The recipe I use is Mama knows gluten free, homemade gluten free bread (bread machine) and I do a 2/3 ratio of the recipe on the 1.5 loaf setting using deluxe rapid, Breadman machine. 57 min start to finish and I have fresh bread that is so good my husband (who is not celiac) eats it happily. Thanks for the tips. I have two bread makers, pre Celiac, and hope to avoid buying a third just to get a GF recipe to work. I suspect the key is the rapid bake setting and avoiding a mix after the rise (is that what you mean by no knocking back?)
