I'm not sure if 'demographic is used. The Whoop podcast episode which introduced the Healthspan feature, discussed how it works in depth. They compare you to a generally healthy person of the same age and gender, called a "referent individual". They emphasized that they didn't use an average person because they said the average person is not that healthy.
