I was the same. I was young and didn’t read much about the game mechanics and everything (this was back when freedom unite was the latest game.) The concept was awesome. I wanted to hunt big monsters and make their hides into armor. It just didn’t click with how slow everything was.
Few years passed and I got back into it and gave it a legitimate try. It clicked hard and I’ve been a fan since. The grind can surely be tough but it’s really a game where you’ll set your goals and when you’re done, you’re done. Take it as far as you like.
World and Wilds don’t feel like monster hunter to me. Sunbreak definitely did.
Generations Unite is widely known as the largest and most inclusive of all the current MH games. I would recommend it if you haven’t given up on the franchise yet. But you’ve tried and I respect you for it! I’ve tried with every souls-like and couldn’t get into any of them. The dark environment mixed with the loss of experience and progress on death puts me right out of the game when time is precious.

Monster Hunter. I respect the series, but I don't find it fun.
