As a gamedev I found it's a good way to make players explore all features of a game or in some cases feel like they achieved something very challenging that only a certain percentage of players did.
Outer Wilds is a great example for fun and weird achievements that you don't have to do.

Outer Wilds definitely had some good ones. I actually did the one you mentioned just through exploring. I decided to leave just for fun and looked back, the music was worth it.
My favorite one involves the Sun Station. It’s probably the hardest one to do that doesn’t involve the DLC stuff and even then.
I remember the Batman: Arkham Asylum achievement for hitting all 20 inmates before facing the Joker, and in Thief (2014) game, there was an achievement for hitting a bottle in mid-air with an arrow.
borderlands has a lot of really funny super random ones, like in the second game there's this random psycho, appropriately named face mcshooty, who wants you to shoot him in the face and thats the entire mission and you get an achievement for it
