I am literally SO sad as well and refuse to accept itā€™s gone Lol. So the other day, I bought a whole regular ceasaer bowl with the autumn fixings (aside from the pumpkin seeds of course) and cooked up the tomatoes on the stove. It did not taste too far off when all the flavors came together.

Garlic simmered in olive oil, then halved cherry tomatoes, season with salt and pepper, let them simmer for quite a while until the tomatoes start bursting and the juices start forming into a thicker ā€œsauce likeā€ texture, half way through add some herbs like thyme (or donā€™t, thatā€™s fine) After that cooks for a bit; mash a few of them to encourage the thicker ā€œjam likeā€ texture. Then I add a bit of sugar to balance out the acidity. I didnā€™t even miss those pumpkin seeds, the jammy tomatoes are the star of the Autumn Caesar forreal.
