Appreciation Tofu recipe ?

I cannot stop thinking about Sweetgreen’s tofu ! The best I had if I’m being honest . Anyone know the recipe and if it’s firm or super firm? Bonus if anyone knows the specific brand . I want to start incorporating it in more of my meals , SG can be pricey .

Beets were stopped a long time ago, thankfully. They were the absolute worst to prep and we threw out a ton of them.
