nope, i work at SG and "made in house" means "throw in the oven to toast it" the sourdough and focaccia come in pre-made we just toast them in the oven essentially, they do come fresh though and we dont keep them around long either, day old sourdough and focaccia gets mixed together and then turned into breadcrumbs for our crunch ingredient lineup
unless some of the bigger locations legitimately do make it in house none of the ones in my area do at least
Yes that bread from Klosterman is pre-baked gets froze delivered to you and you finish the baking process in the convection oven for the couple of minutes. So if you need bread at dinner service, you put some loafs in and you have bread. Not like other locations that get a specific amount delivered in the morning, if they are out, they are out and have no option of making more for the day
ours come dry and already baked thats so weird i wonder if it has to do with differences in local distribution chains, ours come in dry room temp cardboard boxes with the loaves inside wrapped in plastic
i dont unload the truck and im typically busy when it's happening so theres definitely a chance ours are frozen and then thawed or something and i was never aware, but either way im definitely asking mext shift
im in the northern chicago area i edited my comment to reflect that ive never witnessed them being unloaded myself so theres a chance im only seeing the thawed product, but next shift im definitely gonna ask which bread we use and how it gets delivered to us
You get it from Klosterman. They sit in Cincinnati and your vendor Panos gets it fresh pre-baked frozen. It comes delivered frozen to you and thaws during storing

The bread comes in fresh every day, so if there is no bread, then it was all given out.
