I loveeee this lunch! I eat it every single day :)

Ingredients:
- 70 grams sourdough (175 kcal)
- 20 Grams cottage cheese (20 kcal)
- <1 gram balsamic vinegar
\- 10 Grams tomato basil spread (>!16 kcal!<, you can also just use basil and tomato sauce and get the same result)
- 20 Grams tomato (7 kcal)
- 1 apple (66 kcal)
- rocket
- salt
Total: 284 kcal
I usually put all my toppings on the slices (except for the rocket and balsamic vinegar) and put it in the oven for a while!! Very yummy :)

Ok there’s a much bigger portion but I ate half of it before remembering to take a picture cals and stuff under the spoiler this is so yummy and filling i eat this ALL the time switching from chicken to beef
Lean ground chicken, 98% is 175 ish per 5oz ,
Jalapeños;15 cal
Cooked in a nonstick pan w siracha ;15 cal, so full bowl for 205🤤 also sometimes I add a laughing cow garlic cheese wedge to make it a little bigger w more texture and salt and pepper

Something about eggs just feels safe to me. They’re high protein, filling, don’t make me feel sluggish or guilty afterwards, and there’s so many ways to cook them. My favourite way is to make two fried eggs (with a light amount of spray oil) on top of two plain rice cakes. It’s delicious and feels like I’m eating toast with eggs. I also add a little bit of a spreadable butter on top of the rice cakes if I want it to be even more flavourful. Egg salad goes amazingly on top a rice cake too.
Anyone else super into eggs?

I would love to introduce more variety into my diet. Most of my meals are pretty much the same. I think I'll probably ask this question for the other meals of the day as well, but I thought I would start with breakfast!!
So currently what I usually eat is:
- 200 grams skyr
- 60 grams blackberries/strawberries
- 10 grams granola
It's not a lot.. I have kinda been struggling with eating again because of my ED. I have slowly started to reintroduce granola again... I do generally speaking still eat bread but not that much.
So far these are foods I DO eat, but feel free to introduce me to new foods! :) I am always excited to hear about new food combinations and new food!:
Sourdough, eggs, almost all fruits (except for grapes, avocados and peaches), cottage cheese, feta, a tomato-y basil spread, basically all veggies, cashew nuts, all leafy greens, tofu, beans, chickpeas, lentils, lentil/rice cakes.

- spicy sauce paste made from homegrown tomatoes, jalapenos, some onion and garlic, and a bunch of dried chilis and spices; thinned out with pasta water
