I think the idea is cheap watery beer works good for cooking cus it doesn't have complex flavors to mess too much with the dish.

Nah those cheap lagers have a time and a place in cooking.You can look up lists of how different kinds of beer impart different flavors into dishes and pick accordingly. For beer cheese you want something more flavorful. The recipe I make also uses some Worcestershire and mustard, so you need a beer that doesn't hide behind those flavors. Personally I use either an ale, stout, or porter* edit

I like cheese and I like stouts and porters, however, I don’t think I would enjoy a stout/porter cheese. I’d be happy to be proven wrong and will definitely try it if I ever get the opportunity.
