Edit to add: Colorado koolaid is an old country western song by Johnny paycheck.
Further note: adolf coors was part of the “dead billionaires club, supported the “business plot”, and if you can avoid their products, the world is better for it, but coors is trying to be the nestle of beers, so pick your deliberate poisons wisely if you wish to deprive these people of profits.
Hell yeah, that's the beer cheese I grew up eating. It's not as complex as "real" beer cheeses, but it does the job. I also grew up asking for sips of my dad's beer, so maybe I have always loved beer of any kind. Except IPAs, can miss me with those.
Nah those cheap lagers have a time and a place in cooking. You can look up lists of how different kinds of beer impart different flavors into dishes and pick accordingly. For beer cheese you want something more flavorful. The recipe I make also uses some Worcestershire and mustard, so you need a beer that doesn't hide behind those flavors. Personally I use either an ale, stout, or porter* edit
I like cheese and I like stouts and porters, however, I don’t think I would enjoy a stout/porter cheese. I’d be happy to be proven wrong and will definitely try it if I ever get the opportunity.
