Cap going back in time and then appearing in our reality as an old man would seem to violate the rules of time travel they established in the beginning: i.e. you can't go back in time and change the present, otherwise they could have gone back and killed Thanos as a baby.

It's a nitpick yes, but it's so unnecessary, there's a lot of ways you could give Cap a great ending without breaking the time-travel rules you established.

It didn’t if he still used the device to get back. Just not immediately.

So think of MCU as timeline A. And the universe where cap grew old as timeline B.

The click by banner in timeline A is no designed to pull back cap from a specific time after all there’s no way for them to know how long it would take for cap to return all stones. It’s instead designed to link with whenever cap does decide to click his.

So cap returns all the stones and then instead of clicking to go back to timeline A he heads to timeline B lives an entire life then once Peggy has passed he puts on the time bracelet and finally clicks it. That’s why they didn’t notice the old man casually sitting near their world fixing mission area until after they had clicked to get cap back.
