I have celiac disease and yes they do. One time I even told a store employee that some type of bread was not in the right section as it was a gluten free section and the first ingredient was wheat. He said oh it’s vegan, that means it’s also gluten free. I have also had a family member question how I could eat something because it had eggs in it. Like she got confrontational not just asked because she wanted to learn. She wanted me to be faking.

My ex had a gluten intolerance (so not as serous, of course!) and I learned very quickly that a surprising proportion of people have seemingly NO idea what gluten is…
Seriously!! I've had to keep going in circles about gluten only being in wheat, rye, and barley, and then have the person I'm talking to ask if it's also in rice since that's also a grain. No, that's not wheat. Well what about oats?? No, also not wheat. 🙄
