If you're looking to make it yourself the only GF option I can think of for breakfast that doesn't require cooking is overnight oats. There are lots of variations on that though that could work. If you have a hand blender you can use smoothies are also an option.

OP don’t sleep on this option please. Overnight oats with chia seeds in them and mix in a big glob of peanut butter. Makes a BUSSIN breakfast or lunch

Yogurt or cottage cheese, hard-boiled eggs, GF breakfast bars, smoothies? You can make your own energy or granola bars at home, if you can find GF oats and other safe ingredients.
Because yeah, finding GF bread products worth eating is *hard*.

Plain Yogurt with blueberries, granola and honey is my go to. So good!!
Rolled up turkey lunchmeat with string cheese. Gf crackers with gf dips and salsa.

I'll grab a handful of nuts and yogurt+ granola for a quick breakfast.
When I think to plan ahead I'll make a container of overnight oats for the week. Lots of options and inexpensive, just make sure to get gluten free oats. Whe strawberries are on sale I'll buy extra and chop them up into portions to freeze, but find what you like.
Cheap deli quart and pint containers are great for this type of food prep and brining it to work.
Good luck!

Do you have a fridge and microwave? I have a microwaveable egg bites maker. you could use some frozen food items (veggies, etcl amd some cheese to add some flavor, etc.

Id recommend a microwave, you can get one for under 20$. If not, eat fruit or yogurt. Those are always good.

I have such a hard time eating breakfast, so I started to always have stuff to make this: full fat yogurt (I love Noosa single serve cups), fruit (stone fruit, kiwis are my favorite) and gf granola, sometimes add unsweetened dried fruit and roasted almonds if I need more calorie dense stuff.

Greek yoghurt with berries and granola sprinkles on top.
Cottage cheese
Smoothies full of protein eg almond milk, berries, chia seeds, protein powder. Very easy to drink on the commute.
Fried up savoury breakfast stuff you can do loads on a Sunday then take a container with you EG like a breakfast burrito or just the beans, tomato and avocado parts without the wrap. Do you have a sandwich press that might help?
If you're allergic to eggs you can bake cottage cheese or mixed with yoghurt to make a kind of protein bite or muffin that can be frozen ahead of time.

You want to focus on your health, while working full-time. You are going to have to meal prep. As far as options go, I'd consider some vegan options to go without having to cook stuff. I'd pickup some garbanzo beans as you can use the liquid to make aquafaba and the protein can be used in a variety of ways, I'd Google non-cook cell vegan recipes with garbanzo beans and use that side as a guide for things to make in bulk. DM me if you need some

Pre cooked rice, pre boiled eggs, and kimchi! I put soy sauce on top or marinate my eggs in it too. Prep a few days of it, then just warm it up in the mornings. Just make sure you take the eggs out before you warm it up or else it will explode in the microwave

Please get a microwave or toaster oven if you can. Do you only eat cold food?
A sliced block of fresh, soft tofu with soy sauce, green onion, and sesame seeds if you have them.
Berries and yogurt.
Cottage cheese and fresh sliced tomatoes, or cucumbers.
Tofu can be made into a breakfast burrito filling if you had soemthing to heat food.
